Gudrita Lape is an interdisciplinary artist from the capital area of Iceland,
currently based in Seyðisfjörður, Iceland. Her background spans fine arts,
sociolinguistics, and electronic textiles. Creating plant-based food has been her
self-taught project, running parallel to her artistic career for over a decade.
The project emPANdronada Ethical Food began in Valencia as a means of selfdiscovery and survival as a perpetual immigrant. Over time, it has evolved into the
synthesis of Gudrita’s two greatest passions: art and plant-based cuisine, where
she creates sensory experiments and edible installations.
Lightspeed is a collaboration between SKAFTFELL BISTRO, EMPANDRONADA, and
LIST Í LJÓSI, offering a plant-based dining experience that takes you on a whirlwind
trip around the globe. Guests are encouraged to get their hands dirty and fully
engage their senses. Each dish radiates radiance and vibrancy - just like colors,
which are in fact, different wavelengths of light.
