The Turkish name of this street food is Kokorec. Kokorec is one of the most popular street food in Turkey.

After the small intestines of the lambs are cleaned very well, they are wrapped to an iron rod and cooked on the grill for 4 hours.
After cooking on the grill, it is cut into small pieces with a sharp knife.
Than it is mixed with cumin, thyme, red pepper and salt (tomato and green pepper according to customer's request) and served between hot bread. Bon Appetit.
Bu sokak yemeğinin Türkçe adı Kokoreç'tir. Kokoreç, Türkiye'nin en popüler sokak yemeklerinden biridir. Kuzuların ince bağırsakları çok iyi temizlendikten sonra demir çubuğa sarılarak 4 saat ızgarada pişirilir. Izgarada piştikten sonra keskin bir bıçakla küçük parçalar halinde kesilir. Daha sonra kimyon, kekik, kırmızı biber ve tuz (müşterinin isteğine göre domates ve yeşil biber) ile karıştırılarak sıcak ekmek arasında servis edilir. Afiyet olsun.

Kokorec is a popular Turkish dish. It is a typical Turkish dish made from lamb intestines. The intestines of the lambs (thin and thick) are thoroughly cleaned and wrapped and cooked in oak charcoal for about 4 hours. Although it may seem easy at first glance, this special street food takes hours to prepare and cook. Kokorec skewers are made from the intestines of at least two lambs. This is a pretty crazy late night meal. Kokorec is served with pepper and tomato between bread. Adding spices to kokorec is very important in terms of flavor. Spices cumin, thyme, red pepper powder and salt are added.
