Egg Biryani - A whiff of nostalgia
Biryani just the word lights up your mood. That irresistible fragrance, woh khushboo jo poore ghar ko apne rang mein rang deti hai. Making biryani is not just cooking, it is a whole celebration.
I still remember vacations at nani’s house. Nani ke ghar mein ek bada sa duwaar hota tha aur wahin mama log sab non vegetarian khana banwate the. Subah se tayyari shuru ho jaati thi zafran and whole spices carefully hand picked aur ekdum ahtiyaat se thaal mein sajaye jaate. Degh chadh jaati thi chulhe par and the entire place would fill with a slow building aroma of rice spices and anticipation.
Of course, mutton biryani ki baat hi alag hai its depth of flavour and aroma are unmatched. But egg biryani has its own charm. Soft boiled eggs gently simmering in rich masala, soaking up all that flavour; fragrant basmati rice layered on top sealed with a touch of zafran, mint and coriander leaves. Har niwala feels like comfort and luxury together.
Egg biryani is that perfect middle ground, less time consuming than meat yet just as festive. Serve it with raita or just pyaaz aur nimbu and you have a complete meal. Yaad aata hai how my mama would say “sabko pasand hai, jaldi ban jayegi" and whip up a big handi of egg biryani for everyone at once.
