Egg Biryani - A whiff of nostalgia

Biryani just the word lights up your mood. That irresistible fragrance, woh khushboo jo poore ghar ko apne rang mein rang deti hai. Making biryani is not just cooking, it is a whole celebration.

I still remember vacations at nani’s house. Nani ke ghar mein ek bada sa duwaar hota tha aur wahin mama log sab non vegetarian khana banwate the. Subah se tayyari shuru ho jaati thi zafran and whole spices carefully hand picked aur ekdum ahtiyaat se thaal mein sajaye jaate. Degh chadh jaati thi chulhe par and the entire place would fill with a slow building aroma of rice spices and anticipation.

Of course, mutton biryani ki baat hi alag hai its depth of flavour and aroma are unmatched. But egg biryani has its own charm. Soft boiled eggs gently simmering in rich masala, soaking up all that flavour; fragrant basmati rice layered on top sealed with a touch of zafran, mint and coriander leaves. Har niwala feels like comfort and luxury together.

Egg biryani is that perfect middle ground, less time consuming than meat yet just as festive. Serve it with raita or just pyaaz aur nimbu and you have a complete meal. Yaad aata hai how my mama would say “sabko pasand hai, jaldi ban jayegi" and whip up a big handi of egg biryani for everyone at once.

So next time biryani crosses your mind don’t limit it to gosht. Try egg biryani. Every bite takes you back to all those fond memories and carefree, happy days.

Paneer Changezi – A Plate full of nostalgia!!

Food has a way of connecting us to the people we love, long after they’ve gone. For me Paneer Changezi is more than just a dish it’s a memory, a ritual and a silent conversation with Baba.

Baba was a true food lover. A strict vegetarian by choice, yet never the kind to limit anyone else’s joy. In fact, he encouraged me to experiment even with non vegetarian dishes. He believed that food was not about rules it was about love and togetherness. I still remember how people would enjoy chicken shorba with paneer or alu and he would just smile at the way flavors brought everyone to the same table.

Whenever I tried something new Baba would wait for me eagerly in his favorite spot, his chair. That chair was not just furniture it was a piece of his soul. It sat in our huge bungalow balcony perfectly angled to face the open ground. Every morning and evening he would sit there listening to bhajans lost in his own peaceful world. His routine was so precise that even the neighbors marked time by it
"Babuji uth gaye matlab shaam ke 5 baj gaye"

That image of him sitting on that chair, head slightly tilted, eyes calm is etched in my heart. When he left for his heavenly abode, I remember staring at that empty chair and hearing his voice in my mind
“Sona rani kya naya try kiya aapne aaj? Aaiye leke.

His voice, his laughter, his unwavering presence they still live with me. They always will.

Today I cooked Paneer Changezi his favorite. Finished with a drizzle of chili oil and a handful of crispy barista just how he liked it. As I plated it I could almost see him nod in approval. The warm smile that made everything feel right.

Because some dishes are not just food they are conversations, they are hugs, they are love served on a plate.

Going home has always meant one thing is non negotiable that is Food!
MOM ke haath ke chhole bhature can beat any good restaurant or famous joints, then my chachi carried on the tradition (she makes excellent chhole bhature Even better than mom's sometime) Even today whenever mom visits us or we go to Varanasi, this plate is a must.

Today I tried to recreate mom and chachi’s iconic recipe and yes served it just the way mom would, in a shiny steel thali… so shiny you could see your face in it! ✨ Because presentation was always as special as the food.

The taste came close… but that magic touch of theirs? That is something no recipe can capture. 💛

Because some dishes are not just food they are emotions.

Thecha Chicken When Simplicity Steals the Show! 🔥

You know those recipes that surprise you because they are so simple yet taste out of this world? This is one of them. I made Thecha Chicken today and trust me, it’s nothing like your usual chicken curry.

No heavy masalas. No store bought spice blends. Just pure, fiery magic from one thing Thecha! 🌶

For the uninitiated thecha is this rustic Maharashtrian chutney made with green chillies, garlic and fresh coriander. That’s it. But when you pound these together, the aroma hits you like a flavor bomb! Toss that into perfectly cooked chicken and you have something so bold so fresh and so addictive.

The heat of green chillies, the nuttiness of garlic and the earthy freshness of coriander, every bite feels sharp and alive. It’s spicy, but not the kind that burns… the kind that wakes up your senses.

Honestly this dish proves you don’t need layers of masala to create magic. Just a few fresh ingredients and the right technique and boom, flavor explosion!
