Quick Mushroom and Zucchini Stir Fry

Ingredients

1 zucchini sliced
1 pack mushrooms sliced
1 small onion finely chopped
5 to 6 cloves garlic minced
Mixed herbs
Red chilli flakes
Salt and pepper
Olive oil
Butter

Heat some butter and oil in a pan. Add the sliced zucchini and fry for 3 to 4 minutes till tender. Remove from pan and keep aside.

Add some more butter to the pan. Add the chilli flakes and minced garlic. Fry till the raw smell goes away. Add the chopped onions and fry till translucent.

Add the sliced mushrooms and fry for a couple of minutes.

Mix in the stir fried zucchini. Fry for a few more minutes. Season with salt and pepper and add the mixed herbs.

Serve hot!!

The Karandi Omelette! An omelette cooked in a special tadka pan ( vaghariyu in Gujarati). It’s this style of cooking that gives this omelette it’s fluffy texture and layers!!! Along with it some toast butter and of course my daily dose of coffee!!

Recipe
1.5 table spoon of chopped onion
1.5 table spoon of chopped tomato
1 green chilli finely chopped
A pinch of turmeric powder
A pinch of red chilli powder
Salt and pepper to taste
1 egg

Beat the egg till its light and frothy. ( best exercise for ur arm).
Add the other ingredients and mix.
Heat the tadka pan / karandi / vaghariyu. Pour a little oil. Make sure all sides are nicely coated with oil.
Pour the egg mixture into the pan. Cook on slow heat for 4 to 5 minutes.
While cooking make sure to keep moving from the sides to the inside so that the edges are fully cooked. Slowly flip onto the the other side and cook again.
Enjoy it with your choice of bread.

Optional - you can add chopped mushrooms / cheese or any other ingredient your heart desires.

A quick fix for Sunday Cravings!!

Prawn Pepper Fry

250 gms medium prawns ( cleaned and deveined.
1 tsp ginger-garlic-chili paste
1.5 tsp of Kashmiri chilli powder
1 tbsp if chilli vinegar
Salt and Pepper to taste.
1 tsp oil

Dry the prawns well ( as they leave water while cooking)

Mix all ingredients and marinate the prawns for 15 minutes.

Heat oil in a pan and fry the prawns for 3 minutes on each side.

Optional - once cooked add a sprig of curry leaves and give it a toss

Sprinkle some lime juice and coriander leaves and serve hot!!!

My favourite Sunday Snack!

These are known by different names paddu, gundu pongala, gunta ponganalu, guliyappa and masala paniyaram. These dumplings are made from fermented urad dal and rice batter. The fermented batter is poured into the cavities of a special pan and and are shallow fried. Crispy on the outside and soft from inside, these little dumplings of joy have become my favourite snack!

Sunday evening with the paniyaram, some filter coffee and a book ( not in the frame. Feels like heaven!

Batata Vada is a popular Indian Snack. It is made from mashed potatoes and a coating of chickpea flour and then deep fried. But I like to twist things up in the kitchen. Zara hatke!!!

So i made this dish with mashed ratalu or kand (purple yam). It is a root vegetable with a mildly sweet, nutty and earthy taste, with various health benefits and only available in the winters.

Fell in love with the vadas. Only if it was available all thorough the year!

The idea of flatbreads with toppings is not an entirely new one. It dates back centuries ago when the Romans, Greeks, and Egyptians ate their bread in that form. They would place it on a hot stone or in mud ovens to make the bread, then they would spread their toppings, such as herbs or mushrooms, on the flatbread.

Years later, in the 18th century, pizza would be born in Naples, a town in Italy.

Although pizza has long winding roots from ancient Greece through Italy to the rest of the world, it is genuinely most people’s delight. With every slice comes a rich history of different parts of the world. Social, economic, and cultural markings are baked into pizza’s goodness.

Over time, the toppings have changed to accommodate the different cultures of the world. Despite bakers from all over the globe now custom-making the pizza, the bottom line remains the same. Every good pizza has a crust that holds it all together.

I love Rice! Be it any kind! Biryani, Pulao, flavoured rice or just plain daal bhaat.
And then I saw these yummm raw mangoes in my bhajiwala's cart and i picked up a few. Came home opened the fridge and found some leftover rice and i just had to make my Raw Mango Rice!
Ingredients

2 cups cooked rice
1/2 tsp chana daal
1/2 tsp mustard seeds
1 tsp urad daal
1 tbsp peanuts
5 to 6 curry leaves
3 green chilies slit
2 dried red chili
1/4 tsp turmeric powder
A pinch of hing
1 cup raw mango grated
2 tbsp shredded coconut
Salt to taste
Oil

Heat oil. Add mustard seeds. Then add chana daal and fry. Add peanuts and fry again. Add urad daal and fry till the colour changes.

Add green and red chilli and curry leaves.

Add turmeric powder and hing. Immediately add grated mango and salt. Cook for 2 minutes. Add coconut and fry again for a minute. Then add the cooked rice and give it a final mix.

Serve with your choice of side dish and Papadum.

The Maharaja Khichdi

I came across this recipe in one of the food groups I am a part, tried it out and instantly fell in love with it. It has become my go to dinner recipe. The tangy lemony taste, the soggy consistency and the drizzling of homemade ghee is the ultimate comfort food to end this day!

Note: I usually pair it with some roasted papad, but have been lazy and not done my grocery shopping this month. So with no papad in the house I picked the next best available option chips (bataka ni katri) and no meal is complete without a glass of chaas
