Back with another Rūh Lab, this time with

Took on the challenge of an entremet again after pastry school, definitely a bit rusty in places, but with some solid troubleshooting I was able to come up with something better than the original plan.

Kept the flavors simple so the chocolate crémeux could stand out. Clean, balanced, and every note came through.

More Rūh Labs and new pairings coming soon, this series really has been my little outlet of creativity.

Comment “Toffee” for the recipe!

The viral chocolate chip butter cake, but make it better.

Added toffee bits and baked it with couverture chocolate buttons from , which melt beautifully into bakes and work just as well for ganaches, cookies, tea cakes, or even tempered into bonbons.

Great quality simple ingredients. I used the semi-sweet + intense dark and loved the richness they added.
