Chicken masala...
ingredients:�1/2kg boneless chicken �½ tsp red chili powder �1 tsp Garam masala �½ tsp turmeric�2tsp ginger garlic paste�Salt as required �2 tbsps curd�2tbsps Oil
1bay leaf �2green cardamoms �1"cinnamon stick �2 to 4 cloves or laung
1cup finely chopped onions�½ cup tomato purée
Method:
Clean and wash chicken well.� Marinate with gingergarlic paste, turmeric,red chilli powder, salt, chicken masala or garam masala.�Cover & set aside for about 45 mins to 1 hour. Heat oil in a pan .Add cloves,, cardamoms and bay leaf in hot oil for a min. add in green chilies and onions. Saute them until the onions turn completely.Add ginger garlic paste and saute until the raw smell goes off.Pour the tomato puree. Then add salt, red chili powder and garam masala as well.Saute this very well until the mixture begins to leave the pan.Add marinated chicken and saute for 4 to 5 mins on a medium flame.Cover the pan and continue to cook on a low heat until chicken is completely cooked to soft and tender. Stuffed peppers..
Ingredients:�Mirchi-6-7�Besan-1cup�Rai-1tsp�Hing-1tsp�Salt-2tsp�Red chilli powder-1tsp�Turmeric powder-1tsp�Jeera powder-1tsp�Amchoor -1tsp�Curd-3-4tsp�Oil for frying �Method:�Wash and dry green chillies. Remove seeds by making a slit. Now rub little salt inside and keep it aside. Now heat oil. Add mustard seeds n let it crackle. Add besan to it and roast it for almost 10 mins at slow flame. Add salt , red chilli powder, hing, turmeric, jeera powder and anchor to it. Mix well. Let it cool down for some time. Add curd to it to bind the powder. Now stuff this in the peppers nicely. Take some oil and shallow fry it or you can air fry it . I have used air fryer for this.use it as accompaniment with your lunch or dinner.

Eggless coffee cookies...
Ingredients:�Maida-11/2cups�Butter-11/2cup�Powdered sugar-3/4 cup�Rice flour-1cup�Instant coffee-1tsp�Method:�Take a deep bowl. Mix butter and sugar in it and beat it nicely untill creamy. Sift maida , rice flour, coffee well in a separate plate. Mix both the mix well using hands and make it like a dough. Shape it into small balls n use fork to flatten it and give it texture. Preheat oven to 180c and bake it for 15-20 mins.

Ingredients:�Chicken drumsticks-5-6�Ginger garlic paste-2tsp�Red chilli powder -1tsp�Garam masala-1tsp�Salt-1tsp�Lime juice-2tsp�Eggs-2�Cornflour-1/2cup�Cornflakes-1cup�Oil for frying �Method-�Clean drumsticks nicely with water and marinate it with ggpaste , salt, red chilli powder, Garam masala, lime juice and keep it for 2-3 hours.whisk two eggs. Crush cornflakes and spread it in a plate. Take corn flour also in a plate. Dip each drumstick in egg and then roll it into cornflour again dip it in egg and roll it in cornflakes. �Heat oil for deep frying and fry each drumstick.your crispy flaky chicken is ready to eat.

Chicken small pieces- 250gms�Oil-2 tbsp�Onion-2�Tomato puree- ½ cup�Ginger garlic paste-1 tbsp�Green chilly-1 large�Turmeric powder- 1/ 2 tsp�Kashmiri chilly powder- 1 ½ tbsp�Kasoori methi- ½ tsp�Garam masala powder- ½ tsp�Coriander leaves chopped-2 tbsp�Fresh cream-2 tbsp�Method:� Heat butter in a pan; mix egg with coriander leaves, salt and pepper.Add it in to the pan and make omelette. keep it aside.Heat a pan with oil and splutter cumin seeds.Add onions thinly chopped and sauté until golden brown in color.Add ginger garlic paste and sauté for a minute.Add turmeric powder, chilly powder, garam masala powder and salt.Add chicken pieces in to it.Mix well and cover cooks it for about 15.(stir occasionallyAdd tomato puree in to and cook for another 10 minutes.Add kasoori methi and fresh cream; mix well.Add in to serving bowl and sprinkle coriander leaves and spread omelette over it. Ingredients:�Maida-1 1/2 cups�Baking powder-1 1/2tsp�Soda bi carb-3/4tsp�Butter-1/2cup�Powdered sugar-1/2cup�Milk-1/2cup�Mango purée-1cup�Almonds -a few�Method:
Sieve the flour, baking powder n soda bi carb.beat butter and sugar till light and fluffy. Add flour, milk and purée. Mix well.pour into small cake moulds. Sprinkle some nuts on top. Bake at 180c for 20-25 mins.

Smoked chicken...
Ingredients:�Chicken-1/2kg�Ginger garlic paste-2tsp�Tomato purée-1cup�Salt as per taste �Degi mirch-1tsp�Turmeric-1tsp�Cashews-10�Cream-1/2cup�Kasoori methi-2tsp�Method:�Marinate chicken with ggpaste, salt , red chilli powder and turmeric powder and keep it for 15-20 mins. Heat butter in a kadahi . Sauté chicken in it. Add green chillies and add to it. Cover it and let it cook for some time . Keep stirring in between . Add fresh tomato purée to it again stir it and let it simmer for some time. Add cashew paste and cream to it.Now take coal and heat it on gas stove for sometime . Put it in a steel bowl and keep it in the chicken . Now pour some ghee over coal and cover the lid. Let the smoke settle down for some time. In the end add kasoori methi and sprinkle some lime juice. Have it with roti or parantha.

ingredients:�Full cream milk - 1 and ½ liters� Saffron - a pinch� Sugar - 2 tbsp� Cardamom powder - ½ tsp� Mango puree - 1cup
Method:
Put the milk in a heavy bottom pan.� Heat till it comes to a boil.� Take 2 tbsp milk from it in a bowl.� Add saffron and keep aside.� Simmer the heat and let the milk thicken for almost 2 hours.� Keep stirring in between.� When the milk is reduced to ⅓ rd, add saffron soaked in milk, cardamom powder and sugar.� Cook for another 2-3 minutes.� Remove from heat and cool completely.� Add mango puree and mix well. � Chill for a few hours before serving.. 📖 @ Meghalaya

Ingredients:�Paneer-250gms�Butter-4tbsp�Onions-2(finely chopped)�Tomatoes-2(chopped)�Tomato purée-1/2cup�Ajwain-1tsp�Kasuri methi-1tsp�Salt -as per taste�Chilli powder-1/2tsp�Turmeric-1/2tsp�Gingers &garlic-1tsp(chopped)�Ginger garlic paste-1tsp�Lime juice-1tsp�Method:�Marinate paneer with Gg paste, red chilli powder,turmeric and salt and keep aside for 30 mins.melt butter on a tawa or skillet or we can use a flat pan also.add ajwain for few seconds. Sauté chopped ginger garlic and green chilli and onions in it for 2-3 mins.then add red chilli powder , turmeric and Pav bhaji masala to it . Keep stirring the masala . Add chopped tomatoes and purée to it. In the mean time grill marinated paneer cubes on a tawa or a tandoor .we can add little water to masala if it is thick . Add grilled paneer to the masala and stir well so that masala costs the cubes evenly . Cook for 1-2 mins.add kasuri methi and sprinkle some lime juice. Garnish with some corriander leaves and serve with chapati and paranthas.
