Oven Roasted Chicken Leg

Picture this: a kitchen four hundred years ago. No oven. No dial to turn. Just a hot, open fire, and someone standing way too close to it, turning a spit by hand, hour after hour, because that was the only way to cook a bird.

And even then, chicken wasn’t really on the menu. Hens were too valuable alive, laying eggs day after day. Only once a hen stopped laying, an “old boiler,” they called it, did it finally reach the fire. If you wanted something truly tender, you needed a capon: a castrated cockerel, raised for no other purpose than this one meal.

The recipes from back then read almost like riddles. One from 1450 simply says: roast the bird, coat it in egg yolk, ginger, saffron, pepper, “until it is roasted enough.” No time. No temperature. Just trust.
By the 1700s, a little more detail creeps in: pluck, truss, set by a good fire, baste with butter, a quarter of an hour. But the actual skill of roasting was still something you were simply expected to already know.

Centuries later, we’ve traded the spit for an oven and the guesswork for precision, but the instinct hasn’t changed. At Ahavah, we start with whole, fresh ingredients, nothing shortcut, nothing processed. A whole chicken leg, roasted till it’s deeply golden, laid over a silky pumpkin puree, and a bed of baby potatoes, baked till the inside goes soft and the outside turns properly crisp.

No spit. No fire tender standing guard for hours. Just the age old instinct, but in a modern way.
