Gazar Ka Halwah (Winter Special Indian Star Dessert)

Ingredients:
• Grated Carrot- 300 gm
• Milk- 800 ml
• Ghee- 4 tbsp
• Cardamom- 4-5
• Sugar-5 tbsp
• Rasins-1 tbsp
• Cashew nut- 1 tbsp
• Chopped pistachio- 1 tbsp
• Grated Mawa- 3 tbsp
• Saffron water- 1 tbsp
• Chandi ka wark or Silver leaf-2-3

Method
•Heat ghee in a pan and add cardamom.
•Add carrot and fry for 4-5 min.
•Heat milk in a thick bottom sauce pan and reduce till 60%.
•Add sautéed carrot in reduced milk and cook till the milk gets a thick cream consistency.
•Add grated mawa, sugar, raisins and saffron water for flavour.
•Now heat ghee in another pan, add cashew nut and fry till golden.
•Pour the cashew nuts and ghee in to the halwa.
•Garnish with saffron, Chandi ka wark and chopped pistachio/ Almond Flakes.
