Sabudana khichdi


Ingrediants:

2 katori sabudana
7-8 curry leaves
7-8 peanuts [ crushed coarlsely]
1 large onion finely chopped
1 finely chopped green chilly
1/2 teaspoon zeera
a pinch of heeng
lemon juice
1 boiled potato chopped

Method:
soak the sabudana for 15 mins in water
then put it in a sieve and wash it under the tap rubbing gently
once the starch is out leave it aside to dry .make sure that the water has completely drained off
leave it for an hour outside and refrigerate it for an hour.
Take a kadhai put 1/2 tablespoon of oil add crushed peanuts when they start to turn a lil golden brown add chopped onion,curry leaves chopped potatoes heeng and green chilly. Then add sabudana add salt and cover it for 5 minutes under low flame . once the sabudana turns soft add lemon juice .and garnish with coriander. Serve hot. [ ppl who eat khatta meetha can add 1 teaspoon of sugar too before covering it ].

TAMATAR KI CHUTNEY

INGERDIENTS:

6 large sized tomatoes [cut into 6 pcs each]
1 tbsp ginger garlic paste
1/2 teaspoon zeera sabut
1/2 tablespoon of sabut dhaniya
sugar optional
salt to taste
2 green chillies finely chopped
pinch of heeng
oil tocook

METHOD:
TAKE OIL and add zeera and heeng to it.Add saabut dhaniya [thoda sa daroth kar. add ginger garlic paste .add tomatoes and salt and green chillies and add around half a cup of water. cover and cook the tomatoes until very soft. Add sugar if u like the khatta meetha taste. serve hot
It best goes with plain or zeera rice and children love it too

METHI KI BHINDI

INGREDIENTS
3/4 teaspoon fenugreek seeds [methi dana]
2 pinches hing
1/2 kgs bhindi
salt to taste
1/2 teaspoon red chillli powder
oil to cook
METHOD:
heat the oil
add methi dana and fry till dark brown
add hing and then add chopped bhindis and salt.
cook until soft ,

LAUKI KE CHEELAY

INGREDIENTS:
1 small lauki grated
2 green chillies finely chopped
coriander leaves
1 teaspoon ginger garlic paste[optional]
a pinch of ajwain
salt to taste
pnch of heeng
1/2 teaspoon red chilly powder
2 katoris of besan
1 talespoon of plain flour[aata]

METHOD:
mix the besan and aata into a thick batter add the ingredients
then add lauki .
keep the batter for 10 minutes
spread n the tawa and cook first on the low flame and then on high
serve hot with chutney or lime pickle

CHEESE BREAD ROLLS

INGREDIENTS
6 pcs amul cheese cubes
1 finely chopped onion
2 finely chopped green chilles
1 pc finely chopped garlic
1 finely chopped bell pepper [ medium or small sized]
salt to taste
6 slices of bread
1/2 teaspoon black pepper
oil to fry.

METHOD:
grate the cheese cubes in a bowl .Add the finely chopped vegs with the cheese along with the salt.wet the slices and fold them like bread rolls. keep aside for 1 hour so that the cheese melts within. Then deep fry . [ u can prepare the rolls in the morning and fry them at night too] servw hot with sauce or chutney

BREAD MASALA

INGREDIENTS :
2TABLESPOON MALAI
I SMALL FINELY CHOPPED ONION
1 tomato deseeded and finely chopped
i green chilli finely chopped
i pc garlic finely chopped
1/2 teaspoon black pepper powder
1/2 katori fine chopped cabbage
salt to taste
1 eating spoon sooji
1 teaspoon fruit vinegar
1 loaf of bread
1/katori bell pepper finely chopped

METHOD :
mix all the ingrediants in the bowl
take a katori or glass and cut the slices round by pressing hard against the slice
apply the mixture on the slices
fry them on the tawa applying butter or refined oil or the non stick pan does the job best
they have to be fried both sides

RED CHILLI CHANA CHUTNEY
1 katori of dried red chillies
5 pcs of garlic
1tblspoon of desi chana soaked over night
salt to taste

METHOD
soak red chillies in luke warm water for half an hour
boil the desi chana until soft
grind salt , garlic, and soaked red chillies together with lil water so that it gets a little liquid empty in a bowl and add the chanas .
tastes good with normal khana and pakoris

JOWAR AND RICE PARATHAS

Ingredients:3 katoris jowaar aata or rice flour2 finely chopped green chillies2 medium sized finely chopped onions2 finely chopped tomatoesfinely chopped coriander leaves1 katori finely chopped fenugreek leaves[methi leaves]garlic chives [if not available then finely chopped garlic will do approx.1 eating spoon ]
grated ginger Salt to tastesabut zeera half teaspoonpinch of hing1 eating spoon of plain flour

Method.
mix all the ingredients well knead the dough and leave it for 2minutes
then roll them into parathas
cook them on the low flame for sometime

serve hot......,...................................................
