It takes five wazas – Kashmiri chefs – twelve hours, and decades of memory to craft a Goshtaba. Five experienced Kashmiri chefs stand in wait to play their part in the rhythm of Goshtaba. One cleans the meat, another cuts, the next pounds. A wooden hammer meets fresh mutton on stone, over and over, for hours. Fat is added slowly. Temperatures are watched closely. No shortcuts. Just experienced hands, muscle, and the desire to keep tradition untouched.

This is how Goshtaba is born; not just cooked, but crafted. Shaped into perfect spheres, simmered in a yogurt and fennel broth, this is the encore. Served last to stay with you longest.

Kashmiri cuisine may be known for its tender meat preparations or rich, flavourful gravies, but what often goes missing from the discussions about our cuisine are our breads!
We, at Matamaal, want to shift the spotlight to the huge variety of breads from the Kashmiri valley. From baigerkhani, to sheermal and roth, there are so many to try!
We are bringing authentic Kashmiri breads to the forefront for all in Pune to try. Come by and taste some with our mains or order some to enjoy at home!

The Kashmiri Pandit Vegetarian Thali at .pune is inspired by the ultimate wedding feast in Kashmiri traditions. This is the thali served during Mehendiraat and other ceremonial occasions—a meal that unites people in joyous celebration.

On Mehendiraat, a shamiyana (tent) would be set up in the aangan (courtyard), with poat (carpets) laid out in rows for guests to sit. A jug and chilamchi (small container) for handwashing came first, followed by plates arranged neatly for the meal. The dishes were served in rounds—tchok wangun (khattey baigan), dum aloo, nadur yakhni, haak, rice, and finally, the waza with the degchi of paneer kaliya. Paneer kaliya, served over a bed of rice, was the highlight, and only then would everyone begin to eat together.

Our founders, Nalini and Surender Sadhu, have brought the spirit of this Mehendiraat feast to life in our Kashmiri Pandit Vegetarian Thali. Come and experience the flavours and traditions of Kashmiri festivities at Matamaal.
