Gỏi cuốn or nem cuốn, salad roll, summer roll, fresh spring roll, spring roll, rice paper roll, is a Vietnamese dish traditionally consisting of prawn, vegetables, bún (rice vermicelli), and other ingredients wrapped in Vietnamese bánh tráng (commonly known as rice paper or cold roll). Unlike other spring roll dishes which are believed to be originated from China, Vietnamese gỏi cuốn is the country's creation using rice paper and are served at room temperature (or cooled) and are not deep-fried or cooked on the outside.
There is a legend that says the Vietnamese Gỏi Cuốn was invented during the time of king Nguyễn Huệ Quang Trung during a famous battle where he ordered his men to carry each other on hammocks so that one can rest and sleep while others kept moving. Because they were on the go constantly they needed "mobile" meals and invented the spring roll dish as it could be eaten on the go, cold, and the ingredients were light to carry.
