Ingredients
75gm Butter
125gm Maida
50gm Brown sugar
50gm Granulated sugar
4gm Baking soda
1tbsp Cinnamon powder
1tbsp Ginger powder
Instructions
The oven should be preheated to 170 degrees Celsius for 5 to 10 minutes
Combine butter and sugar in a large bowl and cream until light and fluffy
In a separate bowl, combine the flour, ginger, cinnamon powder, and baking soda
Add gradually to the creamed mixture and mix well
Make small balls of dough and flatten them slightly
Prepare a cookie sheet and place the cookies on it
At 180 degrees celsius, bake for 10 to 12 minutes until puffy and lightly browned
Place on wire racks to cool

Ingredients

50 gm butter
75gm white sugar
1 egg
2gm baking powder
70gm flour
15gm matcha

Instructions

Combine butter and sugar in a mixing bowl and beat until pale and fluffy
Then add one egg and mix well
Sift the dry ingredients and set aside
Add the dry ingredients slowly and mix until just combined. Avoid overmixing.
Cover the cookie dough and chill it for 60 minutes
Set the oven to preheat and line a baking sheet with parchment paper
Roll chilled dough into balls
Roll each cookie ball in powdered sugar
Bake for 12 to 15 minutes at 180 degrees until the top has cracked
Cool it down and store it

Ingredients

2 steamed or boiled oranges
200gm almond flour
75gm rice powder
150gm sugar
5gm baking powder
2tbsp curd / milk
25ml oil
4 eggs

Instructions

Steam or boil oranges for 7 to 10 minutes
Using a knife, slice the oranges and remove the seeds, then roughly chop them.
Blend oranges in a blender until smooth, then pour into a bowl.
Whip egg whites with powdered sugar ( 100gm ) in a large bowl.
Meanwhile, combine the egg yolk and sugar ( 50 gm ) in a separate bowl.
Mix egg yolks with orange puree. Once it is combined, add 2 tbsp curd and 25ml oil.
Add the remaining ingredients - rice flour, almond flour, baking powder.
Mix slowly with egg white mixture.
Bake in a baking pan lined with parchment paper.
Bake it for 170 degree celsius for 45 to 60 mins.

Ingredients

1. 200gm unsalted butter
2. 90gm powdered sugar
3. 275gm flour

Instructions

1. Beat butter and sugar with a stand mixer until fluffy and creamy.
2. Add flour to the bowl and beat on medium speed.
3. Scrape the bowl again and mix until well combined.
4. Wrap the dough in plastic and chill until firm for at least two hours.
5. Preheat the oven to 170 degrees Celsius.
6. Slice ½ inch thick slices with a sharp knife.
7. On a baking sheet lined with parchment paper, place slices at least an inch apart.
8. Make a pattern on the top with a fork.
9. Bake it for 10 to 12 minutes at 160 to 170 degrees.
10. To cool, transfer to a wire sheet

Ingredients
75gm flour
75gm melted butter
75gm sugar
2 eggs
3 gm yeast
Instructions
Melt the butter and let it cool
Combine the sugar and eggs together until a pale, thick mixture forms
Incorporate yeast and flour into the wet mixture
Once it has been thoroughly combined, add spoonful's of melted butter at a time to the batter. It will take time for the butter to be fully incorporated with the batter.
The batter will be smooth and shiny
Cover the batter and chill in the refrigerator for 1 to 2 hours
Brush the pan with melted butter using a pastry brush
After 2 hours, the batter will be airy and spongy
Use one tbsp. batter generously and do not spread it
Bake it for 10 to 12 minutes at 170 degrees Celsius
Dust the warm madeleines with powdered sugar

Ingredients

1 cup urad dal
3 cups Ragi powder
Salt
Water

Instructions

Put one cup of urad dal in a bowl and cover it with water.
It should be soaked for three to four hours at least
Drain the urad dal after 3 hours and rinse it 2 to 3 times after that.
After 3 hours, the urad dal will become light and large in size.
Make a smooth paste by grinding the urad dal in a mixi.
Add just enough water to make the texture smooth.
Pour the mixture into a big bowl and add 3 cups of the Ragi powder.
Ensure it is well combined and break up all the lumps.
For fermentation, let it sit for 6 to 8 hours.
Add salt and water to the batter and mix well.
The Ragi dosa batter is ready for making crispy Dosas.

Ingredients
150gm dates
170gm hot water
75gm brown sugar
90gm butter
2 eggs
3gm baking soda
2gm baking powder
1tbsp curd

For sauce
75gm sugar
75gm butter
120gm fresh cream

Instructions

Preheat the oven to 180°C
Put dates in a bowl with boiling water and baking soda, let sit for an hour, then grind in a food processor.
Mix the butter and sugar together.
Add the eggs one at a time and whisk until well combined.
Sieve together flour, baking powder, salt, and spices. Combine well.
Mix dates and curd until well combined.
Prepare the cake pan by greasing it with butter.
In a greased cake pan, pour the batter into the pan and bake it for 35-40 minutes at 190 degrees Celsius.

Butterscotch sauce

In a saucepan, combine all the ingredients and cook over medium heat until the sauce comes to a boil. Cook it for 2 to 5 minutes.

Ingredients
150gm butter
150gm sugar
190gm flour
210gm chocolate
2 eggs
40gm cocoa powder
5gm baking powder
Chocolate chunks
Instruction
Preheat the oven to 180 degrees Celsius for 10 to 15 minutes.
Melt the chocolate in a double boiler or in the microwave.
Butter and powdered sugar should be beaten together until pale and fluffy.
One at a time, add the eggs and beat for 2 minutes on high speed.
Add slightly cooled melted chocolate and mix it
Sieve together all the dry ingredients: flour, cocoa powder, and baking powder.
Cover the dough and chill in the refrigerator for 30 minutes to 2 hours (the final result varies depending on how long it is chilled)
Put chocolate chunks in the dough after rolling or scooping it.
Place it 3 inches apart and bake it for 12 to 14 minutes at 190 degrees Celsius.
After taking the cookies out of the oven, let them cool on the baking sheet.

Instructions
Combine butter and sugars and whisk until creamy and smooth.
Add the egg and mix until incorporated.
In a separate bowl, combine the flour, baking soda, oats and salt. Pour this mixture over the wet ingredients.
Slowly combine together.
Put spoonful's of dough onto a baking sheet.
Bake for 10 to 12 minutes at 180 degrees Celsius in the preheated oven or until golden brown. Allow to cool and remove from baking sheet
