Moroccan-Spiced Pastitsio

Ingredients

2 tablespoons
1 1/4 cups chopped red onion
2 large garlic cloves, chopped
450 gms minced lamb
1 900 gms can diced tomatoes in juice
2 tablespoons Urban Flavorz Mint Leaf
1 1/2 tablespoons ras-el-hanout
1 tablespoon tomato paste
3 teaspoons Urban Flavorz Roasted Jeera
1 teaspoon Urban Flavorz cinnamon powder
3 cups whole milk
8 tablespoons unsalted butter
6 tablespoons all purpose flour
3 large eggs
180 gms feta cheese
450 gms penne
1/2 cup freshly grated Parmesan cheese

Preperation

Heat oil in large pan over medium-high heat. Add onion and garlic; sauté until onion softens, about 5 minutes. Add lamb; cook until brown, breaking into small pieces, about 8 minutes. Stir in tomatoes with juice, mint, ras-el-hanout, tomato paste, 2 1/2 teaspoons cumin, and cinnamon. Bring to boil. Reduce heat to medium-low. Simmer until lamb mixture is thick, stirring often, 15 to 18 minutes. Season with salt and pepper.

Meanwhile, bring 2 cups milk to simmer in medium saucepan. Remove from heat; cover to keep warm. Melt 6 tablespoons butter in heavy large saucepan over medium heat. Add flour; whisk until smooth. Reduce heat to medium-low; cook until roux is pale golden, whisking often, 3 to 4 minutes. Gradually add warm milk to roux, whisking until sauce is smooth. Whisk 1 cup milk and 3 egg yolks in medium bowl; whisk into sauce. Whisk in feta and 1/2 teaspoon cumin. Bring sauce to boil, whisking often. Reduce heat to medium-low; simmer until slightly thickened, mashing with potato masher to break up cheese, about 5 minutes. Season sauce with salt and pepper. Cover; chill. Rewarm over low heat, whisking often, before using.
Preheat oven to 400°F. Butter deep 14-cup baking dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta; return to same pot. Mix 2 tablespoons butter into pasta. Add egg whites and 1/4 cup Parmesan; stir to blend.

Spread 4 cups pasta in dish. Spread lamb mixture over. Top with remaining pasta. Spoon sauce over; sprinkle with 1/4 cup Parmesan. Place dish on rimmed baking sheet. Bake pastitsio until heated through, about 40 minutes

Urban Flavorz & 150g plain chocolate

150g plain

Pre-heat the oven to 180°C, 350°F,. Grease a 17.5cm x 27.5cm (7x11 inch) tin and line with greased greaseproof paper. Break the chocolate into pieces and place 100g in a bowl over a pan of simmering water. When the chocolate has melted, remove the pan from the heat to cool slightly.
Split the open with a knife and carefully scrape the seeds into a bowl. Add the remaining ingredients to the bowl and beat them together for 1 minute. Beat in the melted and reserved solid chocolate. Spoon the mixture into the tin and bake for 18-20 minutes, until the cake has shrunk from the sides of the tin and springs back when lightly touched.

1/4 cup olive oil, divided
24 slices , 1/2-inch thick
3 , peeled
5 ripe plum , cored, seeded, and finely chopped
1/4 cup crumbled
1/4 cup chopped black olives
2 tbs chopped mild green chiles, drained
1 teaspoon Urban Flavorz
1/2 teaspoon Urban Flavorz Roasted
salt, to taste
Urban Flavorz black pepper, to taste

Prepare a medium-hot grill.Brush onion with olive oil. Grill onion, turning with tongs occasionally, for 12 to 15 minutes, or until onion is tender.While onion grills, brush bread slices with oil, and grill for 2 minutes per side, or until toasted. Cut 1 garlic clove in half, and rub on 1 side of toast. Set aside.Discarding root end, chop onion. Mince remaining 2 garlic cloves. Combine onion, garlic, tomatoes, feta, olives, chiles, paprika, , and remaining olive oil in a mixing bowl. Season to taste wtih salt and pepperMound topping on toast slices, and serve immediately.
