August 15 couldn’t be a better day to reflect on the journey of Bengali cuisine.
The arduous journey from Opar Bangla that began with Partition was paved with pain, loss and uncertainty. No one could have imagined that from those painful journeys would emerge a richer, more vibrant Bengal.
When Opar Bangla met Epar Bangla, they argued over ilish and chingri, posto and morich. But slowly, their kitchens began to borrow from each other.
Eventually, the rivalry became heritage.
The differences became diversity.
And two Bengals came together to shape the Bengali cuisine we know and love today.
This Independence Day, let us celebrate the resilience of those who rebuilt their lives, alongside the courage of those who fought for our freedom.
