A special moment for us at Mahabelly.

We were honoured to undertake the first catering at the Principal’s residence following Prof. Susan Elias taking charge as Principal of St. Stephen’s College.

It was a pleasure meeting Prof. Elias and her family. Their warmth and hospitality made for a wonderful evening, and our interaction left us with a strong sense that the College is in capable and promising hands. It was also heartening to see her keen interest in connecting with alumni and collaborating on ideas to make the College even better.

As proud Stephanians, it was especially meaningful to be part of this occasion and witness the beginning of a new chapter in the College’s history.

Wishing Prof. Elias all the very best as she leads St. Stephen’s into an exciting new era!

Sharp raw mangoes, freshly grated coconut, curry leaves and that unmistakable Kerala touch - simple ingredients, maximum “rasam”.

As they say in every Malayali household, “Ithokke alle original summer vibe!”.

One bite and suddenly you’re back at an afternoon sadhya, fan spinning slowly, somebody yelling “choru edukkatte?” from the kitchen.

Fresh prawns tossed in fiery Kerala masalas and roasted on the tawa till caramelised, spicy and intensely flavourful. Messy fingers guaranteed.

KINGFISH TAWA FRY
Thick cuts of kingfish marinated in our signature spice blend and slow-seared on the tawa for a smoky crust while staying tender inside. The kind of fry that Malayalis can spot from across the room.

PRAWNS PEERA
A classic Kerala-style preparation where juicy prawns are cooked with coconut, curry leaves, green chillies and spices until rich, fragrant and beautifully balanced. Comforting, coastal and deeply nostalgic.

Somewhere between Thailand and Kerala, this dessert found its own beautiful story 🥭✨

Inspired by the beloved Thai Mango Sticky Rice, our version takes a distinctly Malayali turn - replacing sticky rice with Kerala’s own cherished matta ari. The red rice brings a gentle nuttiness and depth that feels comforting, familiar and wonderfully naadan, while ripe mangoes add that soft tropical sweetness we all grew up loving.

Finished with coconut milk flowing generously over warm rice and fruit, every spoonful feels like a meeting of two coastal cultures that speak the same language of comfort and abundance. Topped it with some caramelised almonds for crunch and depth!

It’s creamy, fruity, lightly earthy and unapologetically indulgent - the kind of dessert that tastes like a summer afternoon in Kerala, with a quiet nod to the streets of Thailand.

KIZHI BIRIYANI - LIMITED EDIT

In our kitchen, Kizhi Biriyani isn’t simply cooked - athu oru chadangu aanu. Fragrant biriyani rice is layered slowly with masala, finished with sweet dried fruits and crispy varutha ulli, just like the Malabar kitchens we grew up around.

Then comes the heart of the tradition - the biriyani is folded carefully inside a valiya vazhayila, tied tight and steamed patiently, allowing the leaf, spice and smoke to become one. By the time the Kizhi reaches your table, every grain carries the warmth of Malabar itself.

As the vazhayila is opened, the room fills with that unmistakable naadan aroma - rich, comforting and deeply familiar.

On the side, a fresh Manga Thenga Chammanthi brings brightness, while our slow-cooked Eenthapazham Achar adds that beautiful sweet-spicy depth.

The rain doesn’t knock in Kerala, it arrives like a memory. Sudden, familiar, complete. Windows misted, the air turned salty-sweet, and somewhere in the kitchen, something quick and comforting had to come alive.

That’s where these fish cutlets belong.

Flaky fish mashed with spices, shaped by hand, coated and slipped into hot oil while the rain keeps rhythm outside, dripping softly off leaves and rooftops. Crunchy on the outside, packed with bold flavours inside.

Just a snack born between downpours, eaten too hot, shared too fast.

But these cutlets don’t just belong to the monsoon. They find their way onto plates during Easter lunches and Christmas evenings too, nestled beside cakes, roasts, and laughter.

The day of the one who labours.

At Mahabelly, every plate served, every Sadhya prepared, every order packed, every smile shared, and every guest welcomed has the sweat, skill, patience, and heart of our team behind it.

Today, on Labour Day, we paused for a small celebration with the people who make Mahabelly what it is, sharing ice creams, smiles, and a moment of gratitude with our staff across the team.

Mahabelly is here today because of the hands that cook, serve, clean, carry, manage, support, and show up every single day. For that, we are immensely thankful.

And this is just the beginning.

Starting next week, we will be launching a new series, *Mahabellyude Manushyar* - The people who make Mahabelly, where we spotlight the real heroes behind the scenes. Every week, we will share the story of one team member: their journey, their work, their dreams, and the quiet pride they bring to Mahabelly.
