Every kebab tells a story. This one is 200 years old.
Galouti. From the word galawat, meaning tenderisation. Meaning melting. Meaning a kebab so soft it barely asks to be chewed.
The story goes back to Lucknow. To the aging Nawab Asad-ud-Daula, who had lost his teeth but not his love for good meat. His khansamas took on a challenge that reshaped Awadhi cooking forever. Make a kebab that melts on the tongue.
They did. And two centuries later, we’re still eating it.
At Zaōq, our hidden gem is the Mushroom Galouti. Soft enough to melt before you chew. Smoky in a way that makes you pause. Spiced the way a galouti should be, layered, slow, unmistakable. No meat, no compromise. Just the same craft, the same patience, the same finish that made a Nawab fall in love.
The regulars already know. Your turn.
