Onion 3 tbsp
Bell peppers 3 tbsp
Diced cheese 1/4 cup
Moong sprouts 3 tbsp
Salt, b pepper, chaat masala to taste

For chutney
Coriander with tender stems
Chillies
Salt
Lemon juice

You will need
Urad dal 3/4 cup
Moong dal 1/4 cup
Ginger 1 inch piece
Green Chilli 2
Cumin seeds 1 tsp
Salt as per taste
Oil 2 tsp for greasing appam pan
Warm water 2 cups
Chilled butter 2 cups
Chilled creamy thick curd 1.5 cups
Sugar and salt to season curd
Chaat masala
Rock salt
Sweet Tamarind chutney
Mint chutney

For extra fluffy wadas, you may add a few slices of crumbled bread to the batter

For garnish
Moong Sprout, grated beetroot, vorinader leaves, pomegranate arils.

Roasted Makhana Masala ~180–220 kcal

Ingredients (1 serving)

1 cup makhana (foxnuts)

1 tsp ghee

¼ tsp turmeric

½ tsp chaat/black pepper

pinch of salt

1 tsp crushed roasted cumin

lemon wedge

Method

1. Heat a non-stick pan, add ghee/oil. Add makhana and roast on medium heat, stirring often, ~6–8 minutes until crisp.

2. Add spices, toss 30–45 sec, finish with lemon. Serve warm.

🌿 Grilled Brinjal & Tomato Salad

Ingredients (2 servings)

Brinjal (large, purple) – 1, cut into medium rounds

Tomato – 2, cut into thick slices

Onion – 1 small, sliced in rings

Garlic – 2 cloves, finely chopped

Olive oil – 1 tsp (optional, can dry roast)

Lemon juice – 1 tbsp

Green chilli – 1 (optional, finely chopped)

Fresh coriander or parsley – 2 tbsp

Salt & black pepper – to taste

Method

1. Prep the brinjal – Sprinkle salt on brinjal slices, rest for 10 minutes, then pat dry to reduce bitterness.

2. Grill/roast – On a grill pan, tawa, or oven, roast brinjal and tomato slices until golden and slightly charred.

3. Sauté onions – In the same pan, add garlic and onion rings, sauté until slightly caramelized.

4. Toss together – In a bowl, mix roasted brinjal, tomatoes, and onions. Add lemon juice, green chilli, coriander, salt, and pepper.

5. Serve warm or cold as a salad or light dinner.
