Saoji Mutton Curry:- Recipe
Ingredients:
1. Mutton- 1/2 kg
2. Onions- 2 medium (Sliced)
3. Ginger garlic paste- 2 tablespoons
4. Oil- 5 tablespoons
5. Dry coconut- 1/2 cup (Sliced)
6. Black cardamoms- 2-3
7. Green cardamoms- 2-3
8. Coriander seeds– 2 tablespoons
9. Shahi jeera- 1 tablespoon
10. Cloves- 5-6
11. Black pepper– 14-15
12. Cinnamon- stick of 3-4 cm
13. Bay leaves– 3-4
14. Dry red chilies- 10-11
15. Khuskhus (poppy seeds 1 tablespoon
17. Mace (javitri 1 tablespoon)
18. Stone flower (Dagad phool)- 2 tablespoon
19.Sesame seeds- 1 tablespoon
20.Chana dal- 1tablespoon
21.Rice- 1tablespoon
22. Salt- as per taste
23. Red chilli pwd- 2tablespoon
24. Coriander powder- 1tablespoon
25. Garam masala-1tablespoon
26. Jeera Powder- 1tablespoon
Methods:
1. Dry roast all whole spices and make a fine paste.ingredient No- 5 to 21
2. Fry onion in oil till golden brown and make a fine paste.
3. In pan oil add ginger garlic paste after 1min add mutton turmeric powder fry(roast) bhunna 5min then add onion paste after 5min add whole spices paste cook 10min add coriander powder,garam masala,jeera powder,red chilli powder,salt after 2min add water 500ml or as per required and cook 30min n garnish with coriander sambaar.done.
