Gulab Jamuns are EVERYONE’s favourite. These soft sugar syrup soaked balls are always treat.

It is made traditionally with dried milk solids. These dried milk solids are also called as khoya or mawa . I’ll be sharing an easy version of gulab jamun made with milk powder which taste exactly like the ones you get in the market and the best part is it hardly takes any time to make these! I hope you guys enjoy it!

You’ll need:
* 1.5 cups milk powder
* 1/2 cup milk
* 1/4 cup ghee
* 4 tbsp of maida
* 1/3 tsp of baking powder
* 1.25 cup sugar
* 1.5 cups water
* A pinch of cardamom powder or 2-3 cardamoms
* A pinch of saffron

Finally, an eggless version of everyone’s favourite chocolate brownies! Without saying much, I’ll jump to the recipe right away 😝

Eggless chocolate fudge brownies:
Ingredients:
*1 cup plus 1/4 cup sugar
*1 tsp vanilla extract
*180 ml warm water
*115 g butter (I used Amul butter)
*200 g dark chocolate, chopped
*3 tbsp cocoa powder
*1 tsp instant coffee powder
*1 cup all purpose flour

Directions:
1. Butter an 8" square pan or line it with a parchment paper and pre-heat your oven to 180C.
2. In a bowl, add in the water, sugar, vanilla essence and coffee powder and mix.
3. In a microwaveable bowl, melt the chocolate and the butter and mix it till there is a smooth consistency
4. In the chocolate-butter mixture, add in cocoa powder and the sugar-water mixture. Combine it well
5. Add in the flour and mix it only till the flour is well incorporated in the batter. Do not over mix it.
6. Transfer the batter to the baking dish.
7. Bake at 180C for 35-40 minutes. I baked mine for 35 mins. Let the brownies cool completely before you try and cut them.

Chocolate biscuit balls :
You’ll need:
2 packs of marie
100 gms of chocolate
100 gms of milkmaid
1/4 cup butter
1/4 cup cocoa powder
2-4 tbsp of milk
2 tbsp of powdered sugar-optional*

Directions:
1. Grind the marie biscuits and make a coarse powder of it.
2. Melt the butter and the chocolate and mix it well until they’re incorporated.
3. In a bowl, add the ground marie biscuits, cocoa powder, milkmaid, butter-chocolate mixture, and sugar (optional). I skipped using sugar since the milkmaid adds enough sweetness to it.
4. Mix all these ingredients well and add 2 tbsp of milk. This will help to bind them well and add another tbsp of milk if required.
5. Make small balls out of this mixture and keep them in the refrigerator for 10-15 mins.
6. You can choose to have them right away or coat them with some melted chocolate and then refrigerate them again (I prefer the coated ones).
7. You can also coat these balls with chocolate sprinkles or desiccated coconut.

Flourless chocolate brownies:

You’ll need:
* 6 tbsp Salted Butter
* Ÿ cup chocolate chips or baking chocolate
* 2 large eggs lightly beaten
* 2/3 cup Granulated sugar (preferably use brown sugar)
* 2 tsp pure vanilla extract
* Πcup unsweetened cocoa powder-sifted
* 3 tbsp cornstarch
* 1/4 tsp coffee
* œ cup chocolate chips

Directions:
* Preheat oven to 180 degrees.
* Grease an 8x8” square pan and set aside. (You can also line it with parchment paper for easy removal if you like)
* In a small bowl, stir together sifted cocoa powder, cornstarch. Set aside.
* In a microwave safe container or over the stovetop, melt butter and chocolate chips together and stir until smooth and glossy.
* Beat eggs on medium-high speed for 1 minute. The eggs will be pale yellow, thicker and frothy.
* Add sugar to the eggs and beat on medium-high speed for an additional 1 minute. The mixture will be a little thick.
* Add the melted butter/chocolate mixture and vanilla and beat until combined.
* Add dry mixture, coffee and beat until smooth and there are no lumps.
* Add œ cup chocolate chips and stir by hand until they’re evenly distributed.
* Pour batter into the prepared baking dish. Bake in your preheated oven for 18-25 minutes, or until the top is set and a toothpick inserted in the center comes out with wet crumbs!
* Let sit for about 15 minutes. Serve warm or room temperature!
* Store in an airtight container in the refrigerator. To return the fresh-from-the-oven taste simply reheat in the microwave for 10 seconds.
* Enjoy these warm brownies with some vanilla ice cream on the side and top it with some nutella.

*Sprinkle some sea salt over the brownies mixture before baking it. It gives it this amazing flavour which is most enjoyed with nutella over it.
