Good chai requires rigorous boiling of tea leaves to extract maximum flavour in a mixture milk and water. One of the trickier concoctions, the tea leaves release flavours that are partly killed by the heat and layered with another set of flavours that the tea leaves release. This process repeats itself multiple times during the course of brewing a great cup of chai.

Part artist, part artisan. A good cup of tea requires a precise set of conditions - temperature, tea quantity, water softness, etc. But the secret of a good cup lies beyond mere science. It lies in selecting tea leaves that deliver the right notes. A subjective dilemma. An artist's modern rendition of our favourite painting 'Napoleon crossing the Alps' captures this dilemma perfectly.
