Indian Chicken Curry

Ingredients:
500 g chicken cubes
2 medium onions, finely chopped
2 tomatoes, pureed
2 tbsp oil
1 tbsp ginger-garlic paste
1 tsp red chilli powder (adjust to taste)
½ tsp turmeric powder
1½ tsp coriander powder
½ tsp garam masala
Salt to taste
1 to 1½ cups water
Fresh coriander leaves, chopped

Method :
1. Heat oil in a pan on medium heat.
2. Add onions and sauté until golden brown. Take your time here. This builds the base flavor.
3. Add ginger-garlic paste. Cook until the raw smell goes away.
4. Add tomatoes, chilli powder, turmeric, coriander powder, and salt. Cook until oil separates from the masala.
5. Add chicken and mix well so every piece is coated with masala. Cook for 5 minutes.
6. Add water, cover, and simmer on low heat for 20–25 minutes until chicken is tender.
7. Sprinkle garam masala and cook uncovered for 2 more minutes.
8. Garnish with fresh coriander.
Serve with Steamed rice Roti or naan

🧁 Ingredients

8 mini tart shells

½ cup chopped spinach (blanched)

½ cup boiled corn

½ cup fresh cream

2 tbsp grated cheese

1 tbsp butter

¼ tsp nutmeg powder

Salt & pepper to taste

👩‍🍳 Method

1. Prepare Filling:

Heat butter in a pan.

Add blanched spinach and corn, sauté for 2 minutes.

Add salt, pepper, and nutmeg powder.

Stir in cream and cheese. Cook on low flame until thick and creamy.

Let it cool slightly.

2. Assemble Tarts:

Preheat oven to 180°C (if baking).

Spoon the creamy spinach-corn mixture into each tart shell.

Drizzle a little extra cream or cheese on top.

3. Bake or Toast:

Bake for 8–10 minutes until the tops turn slightly golden and bubbly.

(If using pre-baked shells, just heat them in the oven or air fryer for 5 minutes.)

🍝 Penne with Peas, Mushrooms, and Bacon

Ingredients:

• Penne pasta: 12 oz (340 g)

• Bacon: 4 strips, chopped

• Mushrooms: 1 cup, sliced

• Peas: 1 cup (150 g)

• Cream: 1 cup (240 ml)

• Parmesan: ½ cup (50 g), grated

Instructions:

1️⃣ • Cook pasta in salted water until al dente.

2️⃣ • In a skillet, cook bacon until crispy.

3️⃣ • Add mushrooms and peas, sauté until tender.

4️⃣ • Pour in cream and simmer.

5️⃣ • Toss in pasta and Parmesan, mix well.
