Unhala was where we began, a menu built from the part of Maharashtra that raised us. But we hadn't even scratched the surface. Maharashtra is not one story. It is hundreds of them.

Pavsala is the chapter we've been waiting to tell the Maharashtra of monsoon mist over the Sahyadris, of ingredients foraged rather than farmed, of flavours that don't often leave the villages they come from.

We didn't want to just cook this food. We wanted to give it the table it has always deserved.
