Coq au Vin
Made this back in December 2021, during one of our Christmas lunches, and somehow it has stayed in my drafts all these years.
I still remember the moment I poured what felt like an unreasonable amount of red wine into the pot. I kept wondering, Is this really going to taste good? Won’t the wine overpower everything? But that’s the magic of Coq au Vin!
As it simmers low and slow, the alcohol cooks away, the harshness disappears, and what remains is a rich, velvety, burgundy hued sauce that is deep, comforting, and unbelievably flavorful. The chicken becomes fall-off-the-bone tender, soaking up every bit of that beautiful sauce along with the mushrooms, pearl onions, bacon, herbs, and vegetables. It’s easy to see why this humble French classic has stood the test of time.
Originating in Burgundy, France, a region celebrated for its exceptional wines, Coq au Vin began as a rustic farmhouse dish where an old rooster was slowly braised in local red wine until tender. Today, it’s considered one of the finest examples of French country cooking.
Christmas has always been my excuse to step into unfamiliar kitchens… to try recipes I’ve never made before, to experiment, to learn, and to create memories around the table. Looking back at this dish now, nearly five years later, it brings back all of that excitement.
Here’s to anticipating another Christmas filled with new recipes, good food, and even better memories.
