Mizu’s sweet ode to the Japanese sando and the mighty mahua flower 🌸
Crispy, nutty, and wildly aromatic, our special mahua-infused Shokupan bread gives way to lusciously sweet vanilla bean ice cream, while a glossy mitarashi-style, white shoyu & Mahua flower glaze adds the kind of sweet–salty depth you find in classic Japanese wagashi. Then comes the miso–mahua ketchup: fragrant and rich, it nudges the whole dish into a new dimension.
Mahua (Madhuca longifolia) is an indigenous blossom beloved across the Indian subcontinent. Traditionally dried, brewed, cooked, and even pressed for butter, it’s a climate-resilient tree that has nourished communities for generations. Its blossoms are naturally sweet and nutty, making them a dream ingredient for pastry and glazes.
