Introducing: Murasame 村雨 and Shio Kohi 塩コーヒー —
two new cocktails built for exactly this weather. One bright and crisp, one rich and lingering. Both dangerously easy to order twice.

Murasame 村雨 — fresh musk melon, yuzu, tequila, ginger ale. Named after the passing shower. Tastes like the best part of the season.

Shio Kohi 塩コーヒー — café rum, clarified salted caramel coffee, chocolate. The kind of drink that makes a rainy evening feel like exactly where you’re supposed to be.

Kinmedai 金目鯛

Japan’s prized Golden Eye Snapper, is loved for its naturally sweet flavour, rich texture, and delicate finish. A favourite across traditional Japanese cuisine, it’s often reserved for moments worth celebrating.

At Mizu, we keep things simple.

A little time on the hibachi. Wasabi mashed potatoes. Kombu mushroom sauce.

There’s nigiri, there’s sashimi… and then there’s maki.

When most people think “sushi roll,” they’re really thinking of Futomaki — the classic, thick, generously filled roll wrapped in nori. In Japan, it’s the maki.

We love how often it surprises people, especially when they realise just how satisfying one good Futomaki can be.
Traditionally, it carries five fillings: tamagoyaki, unagi, kanpyo, cucumber, and shiitake. But the beauty of Futomaki lies in its freedom — as long as the flavours come together in balance, anything goes.

Ours brings together salmon, kani crab, hamachi belly, avocado, mascarpone and tobiko pearls. And our favourite part (besides eating it) is watching all those colours and flavours come together in perfect harmony.
