Celebrating the 75th birthday of Mrs. Sunita Kalyani, Gaia Gourmet curated a menu that celebrated her favourites with a refined twist.
From Ooni pizzas and Reimagined Kulchas to live Dim Sum and the birthday girl’s favourite Jalebi, each element brought together comfort and creativity. Our signature flying buffet kept the celebration seamless, with Dungar Dum Gosht, Homemade Pasta, and Bissi Bele Bhaat ensuring no one left the dance floor.

A unique challenge for our team — the entire menu was executed without the use of open flame or even induction, making it a truly one-of-a-kind experience.

Gaia Gourmet curated a refined culinary experience for The Soirée — a one-of-a-kind, hands-on indulgence by crafted for an evening where décor by and architectural design by were not just admired, but truly experienced.

The grazing table was designed to be as visually captivating as it was sensorially satisfying. From break-your-own crackers to melt-in-your-mouth one-bite jello pops and perfectly crisp Black Rice Arancini, every element invited interaction.

Guests savoured each bite while delighting in this playful, immersive concept of dining — where food became part of the design story itself. ✨

What is it like to cook at one of the most iconic menus in Mumbai?
We think of it as a walk down memory lane, mixing Irani Cafe charm with Street Food with the soul of Chai Biskoot and fisherfolk emptying nets of bombil at sunrise while wickets fell at gymkhanas.
Curried Egg Brioche Gymkhana Toasties, Pau Bhaji Waffles, Edamame Kachori, Tempura Koliwada Sliders, Chai Tres Leches were some of the dishes inspired by this city we love.
And of course all the amazing architects and interior designers being honored at EDIDA 2025!

Red-coded, flavour-loaded.
A menu where science flirted with sweetness, where cocktails came crimson, and collagen shots stole hearts.
Pomegranate Pannacotta, Hot Sauce Glazed Prawns and Isphan Raspberry Domes were all concocted in the Gaia Gourmet kitchen!
