Our Chicken à la Kiev takes its time, close to 45 minutes and it’s worth every bit of the wait.

Crisp on the outside and the moment you cut through, it opens up into a rich, buttery centre that does exactly what it’s meant to.

It’s one of those dishes people return for, time and again and that to us, says everything.

Even now, that first cut at the table when it opens up just right, is a moment we never get tired of.

Some dishes look simple, until you try making them right.

Dahi ke kebab is one of those. It starts with perfectly hung curd, brought together with rich khoya and just enough binding to hold it all in place.

From there, it’s a careful balance, shaping something so delicate and cooking it just enough to give it a light crust while keeping the inside soft, almost melting.

It’s a bit of an art and one we genuinely enjoy getting right every single time.
