*TRIPLE SCHEZWAN CHICKEN FRIED RICE RECIPE BY CHEF DEV*
Ingredients required
*For schezwan rice*
1 cup rice (cooked)
1 cup noodles
1 tablespoon schezwan sauce
Small pinch of salt
Green spring onions for topping
For chicken schezwan gravy
150 gm boneless chicken pieces
1/2 teaspoon chopped garlic
1/2 teaspoon chopped ginger
2 tablespoon chopped onion
3 - 4 onion cubes
3 - 4 bell pepper cubes
1 teaspoon red chilli sauce
1 teaspoon red chilly paste
1 teaspoon Schezwan sauce
1/3 teaspoon pepper powder
Salt as per taste
Some chopped green spring onions
1 tablespoon cooking oil
1/2 cup water
Other ingredients
1/2 cup fried noodles
2 eggs
small pinch of black pepper powder
Salt as per taste
Some boiled chicken.
*Steps to make the recipe*
1. *Cooking rice and noodles*
Long grain basmati rice is best for fried rice recipe. Soak one cup basmati rice for 20 minutes with enough water. After that boil enough water in a deep vessel pan. Add a small pinch of salt and one tablespoon cooking oil. When the water start to boil add the rice and cook the untill 90% done. Drain the rice and let to cool down completely. Otherwise you can keep them in a blast chiller to cool down quickly. If you have overnight leftover rice then you can also use them. They are best to make any fried rice.
Similarly boil noodles as per package instructions until 90% done. Drain and apply some oil over them. And let them cool down completely.

2. *Making fried noodles*
When the noodles become cool down completely take a small portion and sprinkle some corn flour over them. Mix carefully and keep aside for 5 minutes to set. Meantime heat oil in a kadai on medium high flame heat. When the oil become hot lower the gas flame to low. Now add the noodles and fry till crisp golden. Remove them in a absorbent paper to remove any excess oil.

3. Marinating and frying chicken
Trim the chicken and remove any excess fats present. Then cut them into small bite size cubes. In a mixing bowl add the chicken, 1/2 teaspoon red chilli sauce, small pinch of salt and pepper powder, three tablespoon corn flour,one tablespoon all purpose flour and two tablespoon beaten egg. Mix everything together so that the chicken pieces get coated evenly from all sides. If required sprinkle some water. Cover and keep aside for ten minutes to absorb the flavour. After that fry them over medium heat flame oil till become crisp golden.

4. Making schezwan rice noodles
Heat one tablespoon oil in a Chinese wok or pan over medium heat flame. When the oil become hot, lower the heat to low. Add one beaten egg and scramble. Then add some chopped boiled chicken and stir with the eggs. Keep the gas flame medium at this point. Therefore add the boiled rice, noodles and one tablespoon schezwan sauce.

Give them a good mix so that the schezwan sauce nicely get mixed with the rice and noodles. If required add some more schezwan sauce. Now add white pepper powder and salt as per your taste. Mix everything again to incorporate nicely. Keep the gas flame high while stirring. Taste the seasoning and if required add some more salt and pepper. Sprinkle some chopped green spring onions over them. Mix and remove in a bowl.
5. *Making schezwan chicken gravy*
Again heat one tablespoon cooking oil and fry chopped ginger and garlic till light golden. Then add the chopped onions and fry till translucent under high heat flame. Therefore add the capsicum, bell peppers and spring onion white cubes. Stir fry them for a minute. Lower the gas flame to low and add red chilli paste, red chilli sauce and schezwan sauce. Mix everything and cook for 30 seconds.
Now pour half cup water and simmer. Add pepper powder and salt. Again add the fried chicken pieces and mix well. Simmer for one more minute.

Make a slurry by mixing one tablespoon corn flour with 1/4 cup water and pour over the chicken gravy. Cook them for a while or till the gravy or sauce start to thicken. If the sauce become too thick then add some more water to adjust. When you get the required gravy consistency sprinkle green spring onions. Taste the seasoning and remove in a serving bowl.

6. *Making the omlet*
Beat one or two eggs in a mixing bowl with some pepper powder and salt. Heat half tablespoon oil in a omlet pan and pour the beaten eggs. Fry both side well done. Remove in a plate.

7. *Arranging and serving triple rice*
Now it's time to serve everything we made. This is the best part of triple rice. First place some fried noodles over the rice noodles then top them with some schezwan chicken gravy. And lastly place the omlet over one side of the rice and serve.
