Attention please

On behalf of the whole LA kitchen crew we hereby have decided to keep our kitchen operations suspended for some time until the Corona virus situation settles down .

We value the safety of our staff and also we understand the situation . We have allways taken proper measures when it came to hygiene and made sure the food was prepared in a clean environment .

Keeping in mind what actions our goverment has taken we completely agree with it and will abide by the rules . We do not wish to conduct business by jeopardising the lives of our staff and our patrons .

We will keep you updated as to when we would resume our services . We also request everyone to stay at home and do not venture out unless it's some emergency . Kindly understand in times of crisis your patience and support towards the steps taken by the goverment are necessary . Your safety and health is in your own hands .

We respect what our honorary prime minister shri narendra modi ji has mentioned and completely agree with what he said .

Times are pretty tough but we are sure we can sail through it .

Your health is our primary concern and we are making sure no negligence has been done on that part .

Our today's dish is an amalgamation of kebabs and curries . When east meets west .

Soft melt in mouth vegetable kebabs made from carrots , french beans , green peas , potatoes served on a rich spinach gravy .

The kebabs give a soft and crunchy taste and the spinach gravy gives it a smooth creamy texture .

Why should non vegetarians have all the fun , there are alot of dishes which would turn even a non vegetarian into a veg .

Aloo gobhi (potato with cauliflower)is everyone's favourite and no matter how you make it the taste allways turns amazing , be it home style or restaurant style the taste is allways great .
Today however we thought of giving that same cauliflower a different twist . Although you may find this dish on the menu of some of the restaurants but today we decided to customize it and make it off the menu .

"Gobhi mussallam " , whole cauliflower cooked in a rich gravy allowing all flavours of the spices to give it a lovely aroma . It not just smells but tastes great aswell .

our today's kebab is for those who love it little sweet and mild . Using froth made from egg and strands made from sugar which look like hair also rather "Resham" or silk as we call it .

It's none other than 'Chicken Reshmi Tikka' . Soft , juicy , creamy and melt in mouth . Served best with some sweet Raita .

" vindaloo , vindaloo na na " when you hear this song from fat les the first thing coming to your mind is some spicy vindaloo . Kindly do not confuse this with the authentic portuguese "vin de alho "

According to sources vindaloo is the the second most spiciest curry after the iconic " Phal curry" which is made using bhut jholokia chillies and having it is like signing your own death warrant .

Over a few couple of beers vindaloo is like accepting the challenge as to who can have the most spiciest vindaloo .

Officially this dish is not on our menu but we have customised it for our guests and opted for the chicken variant , for those who like to accept the challenge and go out of the box to try something different .

What comes to your mind when you hear the word " kot kapura or kotkapura" located in punjab ?

Well the place is highly famous for its " Atta chicken " and over the last couple of years it has gained immense popularity due to various food shows which have put it on limelight .

Honestly how many have heard about " Atta chicken" , am sure you would rarely find it on the menu of any food establishment unless its a 5* hotel or a fine wine and dine place where emphasis is put on reviving the lost receipes .

The Actual receipe for this chicken is closely guarded one and we can't blame anyone as somethings should be better kept hidden . Alot of versions have come up over the years and even the plating finesse has evolved making it look more appealing to the masses .

We gave a shot at making this legendary dish , chicken marinated , stuffed with nuts and encased in a banana leaf and covered with wheat dough and allowed to cook for almost 1-2 hours , the banana leaf keeps the chicken soft , moist and juicy from inside and the dough acts as layering shield .

Whats shocking is some claim that the chicken can remain fresh upto 3 weeks if the casing is not opened , however we suggest never do that as fresh food is what one should prefer .

Our today's dish takes us back during the moghul era , our clients and followers must be wondering as to why we keep on mentioning alot about the moghul influence , it's because from persia the culinery art came down towards the moghuls and then awadh .

India too adapted and created their own versions which was filtered down from generations to generations and chefs to chefs . Some passed their heritage while others did not find their future lineage to be worthy of those lost receipes and the secrets of the trade .

We have immense respect towards those restaurants who have tried to get those dishes back from down memory lane , not just is their cooking is unique but some of the dishes take hours of effort along with skilled technique and adequate mandpower .

Dishes like " Gosht ka halwa " where mutton is used as the main ingredient and its hard to believe that such a dish exits , Be it that massive degh made from copper used to prepare biryani which gives it a unique taste or those finer cuts of meat which are cooked with immaculate precision .

Anyways coming back have you heard the name " Parinde main parinda " , offcourse one would remember the legendary movie " Parinda " starring Anil kapoor and jackie shroff but what if we told you there exists such a dish too ?? πŸ€”πŸ€”

Yup , originally the dish consisted of 12 different types of meats all stuffed one inside another with the biggest being the CAMEL πŸͺ and the smallest being the quail πŸ₯ .

With birds like peacock , turkey , pigeon , Duck chicken , quail all used and stuffed inside each other for making this dish . Just imagine the technique which would had been involved in making sure that each of the meat was soft , tender and with every morsel the flavours stood apart .

At LA kitchen we believe one has to be unique otherwise you would be just like the rest , we constantly try to bring up unique dishes to your table and today we just did that .

A whole chicken stuffed with quail and egg where the flavours of chicken and quail along with the tandoori egg give it a different taste . Although we can never try to imitate the actual receipe as that was a unique art , however we have given our humble attempt of making something different .
