This is not a sausage chilly fry.

First we find the best choriz. Then we select only the best parts. (The rest gets fed to the best dogs.) Then we simmer slowly in red wine, enriching flavours and heightening succulence. Our Goan sausage al vinho tinto is another way we do like nowhere else.
