Most homes use a non-stick pan, which is lightweight and heats up quickly. It also loses heat quickly when the dosa batter is poured.

In authentic South Indian restaurants, dosas are made on a heavy cast iron griddle, often 25–50 mm thick.

Here's the science behind it:
