TEA TIME SERIES | | Semolina cake Recipe
This soft, moist and delicious eggless semolina cake is made with ingredients you probably already have in your kitchen.
Perfect with a cup of chai or coffee! ☕️
Ingredients
* Semolina / Sooji – 1¼ cups
* Maida - ¼ cup
* Sugar – ¾ cup ( or 1/2 cup if you are using honey syrup on top)
* Curd – ⅓ cup
* Oil – ⅓ cup
* Milk – ½ cup
* Baking powder – 1½ tsp
* Baking soda – ¼ tsp
* Vanilla essence – 1 tsp
* Pistachios & almonds – for topping (optional)
Method
1. In a bowl, whisk together curd, sugar, oil and vanilla until well combined.
2. Add the milk and mix.
3. Add the semolina, mix well, cover and let it rest for 30 minutes. This allows the semolina to absorb the liquid and soften.
4. Sift together maida, baking powder and baking soda.
5. Add the sifted dry ingredients to the semolina mixture and gently fold until just combined. Do not overmix.
6. Pour the batter into a greased and lined cake tin.
7. Sprinkle chopped pistachios and almonds on top.
8. Bake in a preheated oven at 180°C for about 50-55 minutes, or until a skewer inserted in the centre comes out clean.
