Andhra Cuisine is generally known for its tangy, hot and spicy taste, the cooking is very diverse due to the vast spread of the people and varied topological regions. The state being the leading producer of red chili, rice and millets in India influences the liberal use of spices — making the food one of the richest and spiciest in the world. This richness of spices has also triggered a variety of pickles and chutneys which are tangy and very spicy. Here they have a specialised variety of Podi (something that we referred to in an earlier post) made out of Black Chilli Powder, coriander seeds, Kashmiri Mirch,garlic and turmeric.

A lavish spread of this Podi on top of flat idli's is a craving , for anybody looking out for spice in Idli and spice in life,,

We have all relished Dahi Wada, or Dahi Bhalla as it is called in the North, do you also know that there is a South Indian counterpart to it called Dahi Idli or popularly called "Thayir Idli", this snack is more popular in Chennai, it is not sweet but the tadka on top of the curd will blow you off,

Idli is dipped in curd/dahi and tadka (made from green chillies, Kashmiri Mirch, rai, curry leaves, ginger, small onions, salt etc..) to top it, grated carrot and beet to add to the presentation and taste, simplyyy lovin it!!!

Not many of us know of this simple accompaniment with idli's , the "Podi" as it is traditionally called, Podi is the fastest substitute for chutney, once prepared you can keep it for weeks and use it by mixing it with little ghee or coconut oil, the taste is awesome.

The main ingredients that go in to the Podi is urad Dal, chana dal, dried Kashmiri mirch, hing, sesame seeds, salt etc.., all mixed, roasted and grind to powder, as I said ghee or coconut oil is the perfect additive to Podi,

The Chinese influence on Indian food gave birth to a whole new facet in Indian cuisine popular as the Indian Chinese.
