Moti Pulao! A classic Bengali dish made with aromatic rice, meat or fish, and a hint of sweetness. Here's a recipe for Moti Pulao with chicken:

Ingredients:

- 1 cup basmati rice
- 1 pound boneless, skinless chicken breast or thighs, cut into small pieces
- 2 tablespoons ghee or oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt, to taste
- 1 cup water
- 1 tablespoon rose water (optional)
- 1 tablespoon kewra essence (optional)
- Chopped fresh cilantro, for garnish

Instructions:

1. Rinse rice and soak for 30 minutes. Drain and set aside.
2. Heat ghee or oil in a pan and sauté onion, garlic, and ginger until onion is translucent.
3. Add chicken and cook until browned.
4. Add cumin, coriander, turmeric, red chili powder, and garam masala powder. Cook for 1 minute.
5. Add rice and water. Bring to a boil.
6. Reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked and fluffy.
7. If using rose water and kewra essence, add a few drops to the rice and mix well.
8. Garnish with cilantro and serve hot.

Moti Pulao is a flavorful and aromatic rice dish that pairs well with chicken, fish, or even vegetables. The rose water and kewra essence add a sweet and fragrant flavor, while the spices provide a nice warmth. Enjoy!
