India is a country with many traditions and languages. Based on it states were given boundaries. Every state has its unique taste and flavour to offer to our pallet. When we come to Bengali food, one experiences very vast dishes of food on offer. Bengali cuisine is really very vast, delicate , tasty and varieties. The typical and authentic Bengali food preparations were common 20 - 30 years ago in every households. With changing time and most of our women becoming self dependent, the time is short for cooking. So, the Bengali food joints have come up in numbers who are serving very good and tasty Bengali food. However, these joints are not serving some of the very delicious dishes. The recipe of samber :
Ingredients :
Coriander seeds
Black pepper
Anne seed
Dry red chilli whole
Toor dal
Raw rice
Curry leaves
Fresh coconut desicated
Turmeric powder
Cumin seed
Seasame
Chana dal
Hing or asofoetida

Dry roast all the ingredients. When it cools, grind it to a smooth powder. After 30 mins shift the powder to a air tight container.

Note: ALL the ingredients to be roasted on low flame. Whole masalas should not get burned..

How about having samber? Obvious answer is yes. Ofcourse, but do you know every south indian state has its own flavour of samber. Madras samber is sourish and bit hot. Udippi samber is a bit sweetish in taste and reddish in colour. Kerala style is again different. What I like the most is Andhra style of samber only because it uses yellow pumpkin . This is a sourish veg so tamarind is not used .
One must try these different sambers to really feel the exotic flavour of samber. And one more thing, samber masala available in the market is good. It's better to prepare inhouse. What comes first to the mind when someone would like to have south indian dishes? Obviously it is dosa or idli or vada. There are many varieties of each dosa,idli and vada. You have masala dosa, paper dosa, Mysore dosa, set dosa, neer dosa. Every dosa mentioned above has different taste as ingredients differ and added flavours and seasoning are added.
