🥑 Chickpea Avocado Salad Wraps 🌯
A light, protein-packed wrap that’s perfect for lunch, dinner, or meal prep!

✨ Ingredients:
1 can (15 oz) chickpeas, drained & rinsed

1 ripe avocado

1 tbsp lemon juice

1–2 tbsp vegan mayo or Greek yogurt (optional)

Salt & black pepper to taste

1/4 tsp garlic powder

1/4 tsp smoked paprika (optional for a kick)

1/4 cup chopped red onion

1/4 cup diced cucumber

1/4 cup grated carrots

Handful of chopped cilantro or parsley

Whole wheat wraps or lettuce leaves for low-carb

Toppings: spinach, arugula, sliced tomato, pickles, etc.

🥄 Instructions:
In a bowl, mash chickpeas and avocado together until combined but still chunky.

Stir in lemon juice, mayo/yogurt (if using), and seasonings.

Mix in red onion, cucumber, carrots, and herbs.

Warm wraps slightly for easy rolling.

Add a handful of greens, top with chickpea-avocado mixture, and layer on extra toppings.

Roll up tightly, slice in half, and serve!

💡 Pro Tips:
Make the filling in advance – it keeps in the fridge for up to 3 days!

Add jalapeños or hot sauce if you love spice 🔥

Serve with a side of sweet potato fries or a light soup for a full meal 🍟🍲

Creamy Vegan White Sauce Pasta 🍝🌱

A rich, garlicky, and silky-smooth plant-based white sauce—perfect for cozy comfort food!

Ingredients:
For the sauce:

1 cup cashews (soaked for 2-4 hours or boiled for 10 min)
1 ½ cups unsweetened plant milk (oat, almond, or soy)
2 tbsp nutritional yeast (for a cheesy flavor)
3 cloves garlic, minced
1 tbsp olive oil or vegan butter
1 tsp lemon juice
½ tsp salt (adjust to taste)
½ tsp black pepper
½ tsp onion powder
½ tsp Italian seasoning
¼ tsp nutmeg (optional, for depth of flavor)

For the pasta:

250g pasta of choice (fettuccine, penne, or spaghetti)
1 cup mushrooms, sliced (optional)
1 cup spinach or kale (optional)
Fresh parsley & vegan parmesan for garnish

Instructions:

Cook the Pasta: Boil pasta according to package instructions. Reserve ½ cup of pasta water before draining.

Blend the Sauce: In a blender, combine soaked cashews, plant milk, nutritional yeast, garlic, lemon juice, and seasonings. Blend until ultra-smooth.

Sauté Garlic & Veggies (Optional): Heat olive oil in a pan, add minced garlic, mushrooms, and spinach. Sauté until fragrant.

Combine Everything: Pour the blended sauce into the pan, stirring frequently over medium heat. Add reserved pasta water to reach desired consistency.

Toss & Serve: Add the drained pasta, coat well in the sauce, and cook for another 2 minutes. Garnish with fresh parsley and vegan parmesan.

Enjoy! 😋 Serve warm with garlic bread or a side salad.
