Kasundi, a raw mango mustard chutney and cooking paste, comes to Jaipur Modern Kitchen through a third generational, pre partition legacy recipe from family. Crafted in small batches and slowly fermented, it carries the sharpness of mustard balanced with the tang of raw mango.

At Jaipur Modern, this kasundi finds its way into the Artichoke Lentil Salad, a Turkish inspired preparation seasoned with a Bengali balsamic kasundi dressing.

It also shapes the Kasundi A’la Creme, where paneer is tossed in a creamy mustard infused sauce, with an option of vegan milk and tofu, served with Shah Pasand rice or sourdough pita.

Mushrooms appear across the Jaipur Modern Kitchen menu in more than one form, each variety chosen for how it behaves in a dish.

Button mushrooms, known for their mild flavour and soft texture, are used in the Mediterranean Platter, JM Noodle Bowl, and Burrata Roja, where they absorb sauces and bring structure without overpowering other ingredients.

Cremini mushrooms, which are slightly deeper in flavour, are used in the Truffle Funghi Spaghetti, where they hold up to butter, garlic, and truffle notes.

Shiitake mushrooms are used in our ramen, chosen for their firm texture and stronger umami profile that complements broths.
