3-4 medium-sized potatoes, boiled and mashed
1 medium onion, finely chopped
2-3 green chilies, finely chopped (adjust to your spice preference)
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
A few curry leaves
1/2 teaspoon turmeric powder
Salt (to taste)
2 tablespoons oil
For the chutney:

Coconut chutney or any chutney of your choice
Instructions:

For the dosa batter:

Wash the raw rice, parboiled rice, urad dal, and fenugreek seeds in water thoroughly. Soak them together in enough water for around 5-6 hours or overnight.

Drain the soaked water and grind the mixture to a smooth paste. You can add water as needed to get the right consistency. The batter should be neither too thick nor too thin.

Add salt to the batter, mix well, and let it ferment in a warm place for about 8-10 hours or until it doubles in volume. Fermentation time may vary depending on the climate.

For the masala (potato filling):

Heat oil in a pan and add mustard seeds. Let them splutter.

Add cumin seeds, asafoetida, and curry leaves. Stir for a few seconds.

Add chopped onions and green chilies. Sauté until the onions turn translucent.

Add turmeric powder and mix well.

Add the boiled and mashed potatoes to the pan. Mix everything together, and add salt according to your taste. Cook for a few minutes on low heat. The masala is ready.

For making Masala Dosa:

Heat a non-stick dosa pan or a flat skillet on medium-high heat. Once hot, smear some oil on the surface.

Pour a ladleful of dosa batter in the center of the pan and spread it outward in a circular motion to form a thin, even layer. Make the dosa as thin as possible.

Drizzle a little oil around the edges and on the top. Cook until the bottom of the dosa turns golden and crisp.

Place a portion of the prepared masala in the center of the dosa and fold the dosa from both sides to cover the masala, forming a cylindrical shape.

Remove the masala dosa from the pan and serve hot with coconut chutney or any chutney of your choice.

Repeat the process to make more dosas with the remaining batter and masala.
