There is a certain responsibility that comes with working this closely with nature.
Only because when you spend enough time watching seasons change, harvests arrive, and ingredients make their journey from soil to table, you begin to understand that everything is connected.
At Under The Neem, this thinking extends far beyond the food.
It begins at Sabz Bagh, where farmers work with the rhythms of the season, harvesting what is ready rather than forcing what is not. It continues through our kitchen, where vegetables, grains, oils, spices, and produce are treated with care and intention.
You will find it in the spaces too.
In the repurposed wood that became one of our most photographed swings. In the reclaimed timber, cane weaving, bamboo, and natural materials that shape our surroundings. In choosing materials that age with grace rather than those that simply last.
You will find it in our Trunk Shop, where every product carries the story of a craft, a community, or a cause worth supporting.
You will find it in breakfasts shared with birdsong, lunches that follow the harvest, and meals where freshness is not an aspiration but a starting point.
Perhaps what we are trying to build is not a restaurant, a farm, or a collection of experiences.
Perhaps it is simply a gentler way of belonging to the world around us.
