“Every ingredient we use has a village behind it,” says Matamaal - Kashmiri Cuisine & K&M - Kanz & Muhul 💫 co-founder Hans Sadhu .

Once a month, our purchasing team boards a flight to Srinagar. From there, the trip fans out into Jammu, into Ladakh, into villages that don’t show up easily on a map.

- Almonds and walnuts from orchards that have belonged to the same families for generations
- Shilajit collected from some of the remotest corners of the Himalayas
- Morels foraged, not farmed, from villages where the season lasts only a few short weeks
- Honey you genuinely cannot find anywhere else, unadulterated to the core
- Saffron picked by hand, corm by corm
- Kashmiri chillies at their highest grade
- A variety of rice most of India has never heard of, let alone tasted

None of this is procurement in the way people usually mean it. There’s no centralised mandi for the best shilajit in Ladakh. You find it because someone has spent years building trust with the people who know where it actually is.

The best of it goes through Kanz & Muhul, gets graded to the highest standard, and reaches homes across India and the US.

Somewhere in New Jersey or California, a family using our saffron is closer to that Ladakhi meadow than they realize.

Our team looks forward to these trips more than almost anything else we do. Every time we go, we come back with more than ingredients.

That, to us, is what “farm to table” is supposed to mean.
