We believe comfort comes from familiarity. From flavours you’ve grown up eating, that don’t need explaining. This dish isn’t about ravioli. It’s about nostalgia. Khatta-meetha, the way we’ve always known it. Tamarind, jaggery and fennel folded into creamy pumpkin, balanced with a warm Kerala coconut moilee moilee that brings softness and depth to the palate. Finished with sesame-jaggery brittle, naga chilli oil and fried curry leaves.

A dish that feels instinctive, like you’ve tasted it before — even if you haven’t.

Our oyster mushrooms come from Shroomery, where growing food means working with nature, not against it. What began as a quiet backyard experiment has grown into a farm rooted in curiosity and care.

Founded by Sumit, whose years living across Southeast Asia and the US shaped a love for mushrooms as everyday food. Shroomery was born from a simple question — why were our markets limited to just button mushrooms? That curiosity led him through markets, conversations with farmers and chefs.

Today, Shroomery cultivates organically, without chemicals or shortcuts. The mushrooms are nurtured slowly, and you can feel it in their texture and taste. Delicate yet meaty, deeply umami, they carry the imprint of the space they grow in — clean air, careful hands, and patience.

At OMO, sourcing isn’t just about quality. It’s about knowing who grows our food, how it’s grown, and why that matters on the plate.

We’re grateful to our friend , founder of .in , for introducing us to new ingredients and helping us shape recipes with intent.

Charred cabbage glazed in balsamic, smoky at the edges, tender within.
