This morning I was picking coffee cherries/berries in the garden and I was thinking, how nice it is to be fully into quality in our own coffee garden. It is true, we have a very small garden and we can afford handpicking only the very ripe cherries twice a week (in this season). Many commercial farmers just can't do that, they have to decide on a fixed number of passes one or two.. three at the most and during these passes, harvest the whole berry produce of the year. We on the other hand wait until the coffee fruit is fully ripe and only then pick it up, as a matter of fact we let it ripen so much that some of the berries are taken by the birds :)
of course we do not use any chemicals in our garden so the birds are safe and so are we.
Right after picking, we gently pulp the seeds out of the berries, we use a stone base (uruli), traditionally used to separate rice from its husk. We then keep the coffee seeds in water for normally overnight but sometimes longer, until the fruity mucus is dissolved, and then we dry it out.
I should take photos, next time I'm picking..
