We have been eating sandwiches I don't know since when it became a part of our happy moments lazy moments when not in a mood to cook up a meal moments on the go kind of a perfect snack it slowly crept into every nook and corner of our lifes . Were did it actually come from 🤔

The sandwich that we know now was popularized in England in 1762 by John Montagu, the 4th Earl of Sandwich. Legend has it, and most food historians agree, that Montagu had a substantial gambling problem that led him to spend hours on end at the card table. During a particularly long binge, he asked the house cook to bring him something he could eat without getting up from his seat, and the sandwich was born. Montagu enjoyed his meat and bread so much that he ate it constantly, and as the concoction grew popular in London society circles it also took on the Earl’s name.

Red Bell Pepper Coulis
Ingredients:
1 tablespoon olive oil
2 red bell peppers, seeded and chopped
2shallots, chopped
1/2 cup white wine
1/2 cup chicken broth or vegetable stock
1/2 cup sour cream

Method:
Heat olive oil in a skillet over medium heat. Add red bell peppers and shallots; saute until soft. Stir in white wine and chicken broth, and simmer over low heat until reduced by half.
When the mixture is reduced, stir in sour cream, and transfer the mixture to a blender. Puree until smooth. Reheat before serving

Stuffed Jack-O-Lantern Bell Peppers

Ingredients

6 bell peppers, any colour
450 grams of minced chicken (bone less)
One egg
4 slices whole wheat bread, cubed
1 small onion, chopped
1 small tomato, diced
2 cloves garlic, minced
1/2 cup chili sauce
1/4 cup yellow mustard ( can reduced the quantity according to your taste as mustard has a strong flavour)
3 tablespoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper

Method:

Preheat oven to 175 degrees C. Grease an 8x8 inch baking dish.

Wash the peppers, and cut jack-o'-lantern faces into the peppers with a sharp paring knife, making triangle eyes and noses, and pointy-teeth smiles. Slice off the tops of the peppers, and scoop out the seeds and cores. Stuff the peppers lightly with the chicken stuffing, and place them into the prepared baking dish so they lean against each other.

Lightly mix together the minced chicken , egg, bread cubes, onion, tomato, garlic, chili sauce, mustard, Worcestershire sauce, salt, and pepper in a bowl

Bake in the preheated oven until the peppers are tender and the stuffing is cooked through and juicy, about 25 to 30 min

Till a few years ago when one said capsicum, which is also known as bell pepper, one thought only of green capsicum. Because then capsicum in any other colour was not easily available in India. But now it is no longer so. When you go vegetable shopping, the vendor often asks if you would like to have lal-peeli, meaning red and yellow capsicum.

What is so special about bell peppers?

To understand what is special about bell peppers we have to know what bell peppers really are. They are a wonderful combination of tangy taste and crunchy texture, the colourful bell peppers can also be used to dress up the dining table. With their beautifully shaped glossy exterior the green, red, yellow, orange bell peppers do add a special beauty to the table.

Scientifically known as Capsicum annuum, they are members of the nightshade family, which also includes potatoes, tomatoes and eggplant. Green peppers have a slightly bitter flavour, while red, orange and yellow ones are sweeter and almost fruity. Bell peppers are not 'spicy hot.' Peppers are generally available throughout the year.

TOMATO RASAM WITHOUT RASAM POWDER

Ingredients
2 cups of chopped tomatoes
Fistful of coriander chopped
Tamarind ( optional)
1/2 tsp mustard
1/2 tsp cumin
1 red chilli whole dry
3-4 cloves of garlic
Pinch of turmeric and asafoetida
Salt to taste
3 cups of water

Roast and powder
1/4 tsp of fenugreek seeds
1/4 to 1/2 tsp of pepper corns
1 1/2 tsp of cumin seeds

Method :
Sauté mustard , cumin and red chillies in hot oil until they begin to crackle.
Add garlic, curry leaves and asafoetida
Sauté the chopped or mashed tomatoes until soft
Add the roasted powder and sauté for 2 min.
Add water tamarind , jaggery and salt to taste
Once the rasam comes to a boil simmer for 5 min and switch of the flame
Garnish with coriander and serve hot

Avocado, Tomato and Mango Salsa

Ingredients

1 mango - peeled, seeded and diced
1 avocado - peeled, pitted, and diced
4 medium tomatoes, diced
1 jalapeno pepper, seeded and minced
1/2 cup chopped fresh cilantro
3 cloves garlic, minced
1 teaspoon salt
2 tablespoons fresh lime juice
1/4 cup chopped red onion
3 tablespoons olive oil

Method:

In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic. Stir in the salt, lime juice, red onion, and olive oil. To blend the flavors, refrigerate for about 30 minutes before serving.
