Tomato Sauce recipe in hindi
Material:
- 1 kg and 1 small bowl 1.5 kg red round tomatoes
- 1 small onion
- 8-10 cloves of garlic
- 1.5 inch piece of ginger
- 6-7 pieces of beetroot
- 6 black peppers
- 4 cloves
- 2 small pieces of cinnamon
- 1 green cardamom
– 1/2 small star anise
- 1 & 1/4 cup white vinegar
250 gms sugar
1/2 tsp black salt
- A little less than 2 tablespoons salt
- 1 tablespoon chili powder
- 1 tsp Kashmiri chili powder
Cooking instructions
1. First of all, bring round, red but not soft tomatoes from the market. Wash and wipe them. Let them dry well. Peel, wash and dry onions, garlic, ginger and beetroot. Take out the whole spices in a plate. When the tomatoes dry, remove the top part and cut them into small pieces. Chop onion, ginger and beetroot too. Put all these ingredients in a dry pan. Mix it with a dry spatula and put it on the stove to cook on low flame. Cover the pan with a dry lid.
2. Remove the lid and keep mixing every 2 minutes, otherwise
It will burn.When the tomatoes become soft, turn off the flame and let it cool. Then take out all the whole spices that you have added. You can grind them and add them to the vegetable later. You can grind tomatoes when it is slightly hot, so grind them well now.
3. Place a large steel sieve over a steel vessel and pour the grinded tomato into it and strain it while stirring with a spoon. Only a little should remain on the sieve, if more remains, then grind it again. The little that remains on the sieve can also be used later in vegetables or dal. Put it back in the pan. Put it on low flame and add black salt and white salt.
4. Add vinegar and sugar. Mix continuously till the sugar melts and then thicken it by mixing every few minutes.
5. Filter both the chilli powders through a tea strainer or else the chilli spots will be visible in the sauce. To check if the sauce has thickened or not, pour a little sauce in a plate and then tilt the plate to see if it is coming down immediately or not. If it is not coming down then it is fine, turn off the gas. If it is coming down immediately then thicken it further.

8. When it cools down, fill it in a clean dry glass bottle with the help of a cone. Keep it clean and dry beforehand. If you don't have a bottle, you can also keep it in a glass jar. After filling the sauce in the bottle, close the lid and wipe it thoroughly with a cloth. Then keep it in the fridge. Take it out and use it when needed.
9. Note: The glass bottle or jar and all other ingredients or utensils should be thoroughly clean and dry.
