🍫 Chocolate Lava Cupcakes (With Egg)

Makes: 6 cupcakes
Prep time: 10 mins
Bake time: 10-12 mins

Ingredients:

Dark chocolate – 100g (chopped or chips)

Unsalted butter – 50g (or 4 tbsp)

Powdered sugar – 1/2 cup

Eggs – 2

All-purpose flour (maida) – 1/4 cup

Cocoa powder – 1 tbsp (optional, for richer taste)

Vanilla extract – 1/2 tsp

A pinch of salt

Instructions:

1. Preheat oven to 200°C (390°F). Grease or line a muffin tray.

2. In a bowl, melt chocolate and butter together (microwave 30-sec bursts or use double boiler). Stir till smooth.

3. Add sugar and mix well.

4. Beat in the eggs one by one. Add vanilla.

5. Sift in the flour, cocoa powder, and salt. Fold gently until just combined.

6. Spoon the batter into cupcake liners, fill only halfway, then add a cube of chocolate or Nutella in the center, and top with more batter.

7. Bake for 10-12 minutes. The edges should be set, but the center slightly jiggly.

8. Cool for 2 minutes, serve warm for that gooey lava center.

🌾 No-Bake Ragi Cookie Sticks

đź§‚ Ingredients:

Ragi flour – 1 cup

Rolled oats (or powdered oats) – ½ cup

Jaggery powder – ½ cup (or dates paste ½ cup)

Ghee – ¼ cup (or coconut oil)

Peanut butter – 2 tbsp (optional for taste and protein)

Cardamom powder – ¼ tsp (optional)

Chopped nuts or dry fruits – 2 tbsp (optional)

Milk – 2–3 tbsp (to bind, adjust as needed)

Dark chocolate – ½ cup (for dipping, optional)

Edible gold leaf – optional (for decoration)

🍳 Method:

1. Roast Dry Ingredients

Heat a pan on low flame.

Dry roast ragi flour for 4–5 mins until it smells slightly nutty (don’t burn).

Dry roast oats slightly if using whole oats. Let them cool, then powder them.

2. Mix Wet Ingredients

In a bowl, mix jaggery powder, ghee, and peanut butter (if using).

Stir well until it becomes smooth.

3. Combine Everything

Add roasted ragi flour and oats powder to the wet mixture.

Add cardamom powder and nuts if you like.

Mix well and add little milk to make a soft dough.

4. Shape the Cookie Sticks

Roll the dough into a thick rectangle.

Cut into stick shapes.

Place them on a plate or tray lined with butter paper.

5. Chill to Set

Refrigerate for at least 1–2 hours until firm.

6. (Optional) Dip in Chocolate

Melt chocolate and dip one end of each stick.

Decorate with gold leaf if desired.

Chill again for chocolate to set.

Keep in fridge for up to a week. Serve chilled for best crunch.

For kids, you can skip chocolate and just roll in dry coconut powder.

🌾 Crispy Ragi Cookie Sticks Recipe

Ragi flour (Finger millet flour) – 1 cup

Whole wheat flour – ½ cup

Jaggery powder – ½ cup (you can also use brown sugar or coconut sugar)

Ghee or melted butter – ¼ cup

Vanilla essence – ½ tsp (optional)

Baking powder – ½ tsp

Salt – a small pinch

Milk – 2–3 tbsp (as needed to make dough)

Dark chocolate – ½ cup (for dipping)

Edible gold leaf – optional (for decoration)

🥣 Method:

1. Preheat the Oven

Preheat your oven to 170°C (or 340°F) for 10 minutes.

2. Mix Dry Ingredients

In a big bowl, add:

Ragi flour

Wheat flour

Jaggery powder

Baking powder

Salt

Mix well with a spoon or whisk.

3. Add Wet Ingredients

Add melted ghee and vanilla essence.

Mix with hands or spoon until crumbly.

4. Make Dough

Slowly add milk, little by little.

Knead gently to form a soft dough (not too sticky or too dry).

5. Shape the Cookie Sticks

Roll the dough gently into a rectangle.

Cut into long stick shapes (like fingers).

Arrange them on a baking tray with parchment paper.

6. Bake

Bake in the preheated oven for 12–15 minutes or until firm and slightly crisp.

Let them cool completely (they become crispier as they cool).

7. Dip in Chocolate (Optional)

Melt the dark chocolate using double boiler or microwave.

Dip one end of each cookie stick into the melted chocolate.

Place them on parchment and let the chocolate set.

Decorate with edible gold leaf if you like.

Milky Donuts – from Belladonna’s Kitchen

Ingredients:
1 kg flour
1/2 cup sugar
1/4 cup milk powder
1 tbsp yeast
1/2 tbsp salt
2 eggs
1/4 cup butter (soft or melted)
1 1/4 cups water (lukewarm)

Step-by-Step Preparation:
1. Mix dry ingredients:
In a large bowl, combine flour, sugar, milk powder, salt, and yeast.

2. Add eggs and butter:
Add the eggs and melted butter to the bowl.

3. Add water:
Gradually pour in the lukewarm water and initiate mixing. Knead until a soft dough forms.

4. Rest the dough:
Cover the dough with a cloth and allow it to rise in a warm environment for approximately 1 hour, or until it doubles in size.

5. Roll and cut:
Once the dough has risen, roll it out to a medium thickness. Utilize a donut cutter (or two round cutters) to shape your donuts.

6. Second rise:
Place the cut donuts on a tray. Cover and allow them to rise again for 30 minutes.

7. Fry the donuts:
Heat oil in a deep pan over medium heat. Fry the donuts until golden brown on both sides. Avoid overcrowding the pan.

8. Drain and coat:

Butter Cookies – from Belladonna’s Kitchen

Ingredients:

1 egg

3 cups flour

1½ cups icing sugar

â…“ cup corn flour

ÂĽ cup milk

1 cup butter (softened)

1 tbsp vanilla

Preparation:

1. In a bowl, mix butter and icing sugar until smooth and creamy.

2. Add the egg and vanilla. Mix well.

3. Slowly add flour and corn flour. Mix as you go.

4. Pour in the milk and knead gently until the dough is soft.

5. Wrap the dough and keep it in the fridge for 30 minutes.

6. Roll out the dough and cut into your favorite shapes.

To bake in an oven:

1. Preheat oven to 170°C (340°F).

2. Place cookies on a tray lined with butter paper.

3. Bake for 12–15 minutes or until edges are light golden.

4. Cool completely before storing.

No-Oven Method (on gas stove):

1. Take a heavy pan or kadai. Add salt or sand at the bottom (about 1½ inches).

2. Place a stand or small bowl in the center. Cover with lid and preheat on medium flame for 10 minutes.

3. Place cookies on a plate or baking tin that fits inside (line it with butter paper or grease it).

4. Put the plate on the stand inside the kadai. Cover and cook on low flame for 15–18 minutes.

5. Check if the bottom of cookies turns light golden. Cool completely before eating.

Best Red Velvet Cake Recipe

Ingredients:

250g flour

150g sugar

2 large eggs

½ tsp salt

1 tbsp cocoa powder

1 tsp red food color

ÂĽ cup water

1 cup buttermilk

½ cup vegetable oil

1 tsp baking powder

ÂĽ tsp baking soda

1 tsp strawberry flavor

Steps:

1. Preheat oven and line your cake pan.

2. Mix red food color with water and set aside.

3. In a bowl, whisk eggs, sugar, oil, and flavor.

4. Add buttermilk and the red mix. Stir well.

5. Sift flour, cocoa, baking powder, soda, and salt.

6. Gradually mix dry ingredients into the wet mix—no lumps!

7. Strain batter if needed, pour into pan.

8. Bake until a toothpick comes out clean.

Homemade Biryani Masala
Ingredients :-
Bay Leaves - 10
Cinnamon stick - 6 inches
Star Anies - 4
Mace (Javitri ) - 4
Nutmeg - 1 piece
Cloves - 2 large spoons
Black Pepper - 2 large spoons
Coriander seeds (proven coriander) - 4 large spoons
Cumin - 2 large spoons
Royal cumin (black cumin or black cumin) - 2 large spoons
Fennel - 1 large spoon
Green cardamom - 30
Black cardamom - 6
Red pepper powder - 2 large spoons
Turmeric powder - 1 teaspoon
1. Take all Sabut spices (except masala powder - red pepper and turmeric powder) in one pot
