Hey all , an amateur attempt in creating this video , so lots of mistakes . But the recipe is worth trying for sure . Hope u will enjoy watching n cooking with me . I hv written the recipe as well below .
Shahi Aloo Pyaaz Recipe
Prep time 3 hours
Cooking time 3 hours
Servings 7 -8 kg ready subzi
Ingredients:
1.5 kg medium sized potato washed , peeled and sliced from length
750 gms baby onions washed and peeled
250 gms paneer cubed
100 gms Makhane
100 gms cashews
100 gms soaked and peeled almonds(optional)
400 ml sour curd mixed with 1 tsp of gram flour
250 gms shelled peas
400 gms desi ghee for frying and cooking
2 inch ginger juliens
2 litre water
Fistful of Kasoori methi
Fistful of fresh coriander
For Gravy :
1kg tomatoes
500 gms onion
8 whole garlic
3 inch ginger
5-6 red chillies
2 -3 tsp salt
1 tsp black salt
2 tsp red chilly powder
4 tsp kitchen king
2 tsp coriander powder
1 tsp turmeric powder
1 tsp garam masala
2 tsp dry mango powder
2 tsp Degi mirch
4 bay leaves
10-12 cloves
15-20 black Peppercorns
5-6 green cardamom
1 inch cinnamon stick
1 black cardamom
2tsp shahi jeera
2 tsp normal jeera
Method :
•Deep fry potatoes and paneer in hot ghee till golden brown
•In the same ghee add whole spices and purée the onion garlic ginger and tomatoes . Add the same .
•After the ghee separates add peas , baby onions , and ginger juliens . Cook them for 2 mins .
•Add all the dry kitchen spices
•Now add makhane and cashews to it and stir them well .
•Add potatoes and water along with it . Once it comes to a boil , start adding yogurt and Kasoori methi to it .
•Stir it till the time the gravy starts boiling and now cover it for a minimum of 2 hours till the time potatoes are completed cooked from inside and u see a good layer of ghee on top .
•Time to garnish with fresh coriander and serve with ur favourite bread .
