We make our Laphing Wala’s kimchi with fresh Napa cabbage, carrot, radish, spring onion, rice floor, salt, sugar, chilli paper, ginger and garlic, then bottle it fresh. This traditional process of fermentation creates a bubbly zing of healthy probiotic. You can eat it fresh now, or also try to bolder flavor it gains through fermenting in your refrigerator.
