In TISS, the families of the college staff would distribute modak to all students who came to attend the Ganesh Aarti during the Ganapati poojan days. This modern twist on modak is to acknowledge the skill and magic in the hands of all Kakus (Auntys) who fed us Modaks then.
The outer layer here is made with rice paper and inside is a modak filling with desiccated coconut and jaggery in 2:1 ratio. A heaped spoon of poppy seeds and little cardamom powder. No ghee required. ๐ฏ vegan ๐ฑ
