Sahi Chicken Korma... Sochiye naam sunke muh me pani aa gaya to ye kitna tasty n yumeeeee hoga..


Lets Start to cook Sahi Chicken Korma.

Ingredients
•Boneless lamb,1 inch cubes /mutton 600 grams
•Ghee /oil 4 tablespoons
•Green cardamoms 5
•Cinnamon 1 inch stick
•Mace 1/2 blade
•Cloves 4
•Onions,chopped 3 medium
•Ginger-garlic paste 1 tablespoon
•Coriander powder 1 tablespoon
•Red chilli powder 1 1/2 teaspoons
•Salt to taste
•Yogurt,whisked 1/2 cup
•Cashewnut paste 1/4 cup
•Garam masala powder 1 teaspoon
•Fresh cream 1/2 cup

Method
Heat ghee/oil in a thick-bottomed pan and add green cardamoms, cinnamon, mace and cloves and sauté till fragrant. Add onions and sauté till light brown.

Add ginger-garlic paste and cook for one minute stirring continuously to avoid the masala from sticking to the bottom of the pan.

Add mutton cubes and cook on a high heat for three to four minutes stirring constantly. Add coriander powder, red chilli powder and salt. Cook for another two to three minutes. Then add yogurt and three cups water. When the mixture comes to a boil, reduce the heat, cover and cook till the mutton is cooked and tender. Add cashewnut paste and garam masala powder.

Cook for five more minutes on medium heat. Finish off with fresh cream. Simmer for ten minutes. Serve hot,,

today i am going to share with u one of my favorite paneer dish.... its paneer pasanda... I hope u all will like it...

Ingredients:

4 cups Indian cottage cheese (paneer)
2 onions thinly chopped
4 tomatoes cut into chunks
1 inch ginger
3-4 green chillies
4-5 cloves garlic
1 tsp sesame seeds
Few curry leaves
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1-1/2 tsp coriander powder
3/4 tsp garam masala powder
3/4 cup condensed milk
1 tbsp unsalted butter
1 cup fresh cream
2 tbsp mint leaves thinly chopped
1 tsp dried kasuri methi
Fresh coriander leaves chopped
1/2 tsp lemon juice
1 tbsp ghee
Oil to shallow fry

How to make Paneer Pasanda:

Cut the paneer in cubes, shallow fry in hot oil and keep aside.
Combine tomatoes, ginger, garlic, green chillies and sesame seeds.
Grind together and make a smooth paste. Keep aside.
Melt the ghee in a kadhai and add thinly chopped onion along with curry leaves.
Fry until onion translucent.
Now add tomato paste, salt, red chilli powder and turmeric powder.
Cook on medium high heat until paste thickens and oil starts touching the bottom of the pan.
Add fried paneer and stir gently for few seconds.
Keep the flame low and stir the gravy with coriander powder, garam masala powder and lemon juice.
Mix well and add milk.
Leave to cook for about 3-4 minutes until it starts boiling.
Finally stir with fresh cream, kasuri methi, coriander leaves and mint leaves.
Mix very gently and dollop with a tsp of butter.
Serve hot with tandoori roti or naan...

Ingredients

1 pack White Button Mushrooms
1 sliced Onion
1 thinly sliced Capsicum
3 medium Garlic chopped
1 tsp finely chopped Ginger
2 tbsp Olive/Vegetable Oil
1 tsp Tomato ketchup
1 tsp Red Chilli powder
1 tsp Garam Masala powder
1/2 cup Water
3 tbsp light Soy sauce
1 tbsp Corn Flour
1 tbsp Lime juice
1/2 cup Spring onion chopped
1/2 cup finely chopped Cilantro (coriander leaves)

Method

Cut Mushrooms into halves. Cut Capsicums into thin strips.
In a pan add Oil. Add the Onion, Garlic and Ginger. Fry till translucent.
Add Capsicums and Mushrooms. Add salt. Stir fry till vegetables are tender crisp.
Add Red Chilli powder, Garam masala powder, Tomato ketchup and Water. Simmer till almost dry.
Add Soy sauce and Lime juice. Mix Corn flour with 3 tblsp water and add it to the gravy. Bring to a boil, simmer for 1 minute.
Sprinkle with Spring onion & Cilantro. Serve hot with Roti, Chapati or even Steamed rice

Ingredients

•Chicken,boiled and chopped 1/4 cup
•Bamboo shoots 1 slice
•Cornflour/ corn starch 3 tablespoons
•Onion ,chopped 1 small
•Garlic,chopped 2-3 cloves
•Ginger,grated 1 inch piece
•Celery,chopped 2 inch stalk
•Carrot,grated 1/2 medium
•Cabbage,chopped 1 small piece
•Button mushrooms,chopped 2
•Green capsicum,chopped 1/2 medium
•French beans,chopped 2
•White pepper powder 1/2 teaspoon
•Salt to taste
•Sugar 1/2 teaspoon
•Soy sauce 2 tablespoons
•Green chilli sauce 2 tablespoons
•Chicken stock 4-5 cups
•Vinegar 2 tablespoons
•Spring onions with greens,chopped 1

Method

Boil the bamboo shoot slice in one cup of water for two to three minutes, drain, cool and finely chop. Blend corn flour in half a cup of water. Heat a non stick wok or a saucepan, add onion, garlic, ginger and roast briefly. Add celery, carrot, cabbage, bamboo shoot, mushrooms, capsicum and French beans. Roast for two to three minutes or until vegetables are almost cooked, stirring continuously. Add chicken and roast for one minute. Add white pepper powder, salt to taste, sugar, MSG, soy sauce, green chilli sauce and mix well. Stir in chicken stock and bring it to a boil. Stir in blended cornstarch and continue to cook for a minute or until the soup thickens. Stir in vinegar and serve piping hot, garnished with spring onion with greens.
