Sourdough Bread

This recipe makes one loaf of delicious sourdough bread.

Ingredients

500g (4 cups) bread flour

100g (½ cup) active sourdough starter

350g (1½ cups) water (room temperature)

10g (2 tsp) salt

📝 Instructions

Step 1: Feed Your Starter (If Needed)

If your sourdough starter has been in the fridge, feed it 4-6 hours before baking. It should be bubbly and active.

Step 2: Mix the Dough (Autolyse Step)

In a large bowl, mix flour and water (without salt or starter).

Cover and let it rest for 30-45 minutes to allow the flour to absorb water.

Step 3: Add Starter & Salt

Add the sourdough starter and mix well.

Sprinkle salt over the dough and knead lightly until incorporated.

Step 4: Bulk Fermentation (Stretch & Fold Method)

Cover the dough and let it rise at room temperature for 4-6 hours.

Every 30 minutes, do a stretch & fold:

Grab one edge, stretch it up, and fold it over.

Rotate the bowl and repeat 3 more times.

Step 5: Shaping the Dough

Lightly flour a surface and shape the dough into a round ball.

Place it in a floured proofing basket or bowl.

Step 6: Second Rise (Cold Proofing for Best Flavor)

Cover and let it rise in the fridge overnight (8-12 hours) for the best texture and tangy flavor.

If short on time, proof at room temp for 2-3 hours instead.

Step 7: Bake the Bread

Preheat oven to 230°C (450°F). Place a Dutch oven inside.

Remove dough from the fridge and score the top with a sharp knife.

Carefully place it in the hot Dutch oven, cover, and bake:

30 minutes covered (creates steam for a crisp crust)

15 minutes uncovered (for deep golden color)

Let it cool completely before slicing!

🔥 Pro Tips for Perfect Sourdough

Use a kitchen scale for accuracy.

Longer fermentation = better flavor.

If your crust is too hard, wrap the bread in a towel after baking.

Don't slice it while hot! Wait at least 1 hour for the best texture.

Eggless Marble Loaf Cake

A soft and moist vanilla and chocolate swirled loaf cake, made without eggs!

Ingredients

For the Vanilla Batter:

1 ½ cups (190g) all-purpose flour

1 tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup (120ml) milk

½ cup (120ml) yogurt (or ¼ cup milk + ¼ cup lemon juice)

½ cup (100g) granulated sugar

¼ cup (60ml) vegetable oil or melted butter

1 tsp vanilla extract

For the Chocolate Batter:

2 tbsp unsweetened cocoa powder

2 tbsp milk

1 tbsp sugar (optional)

Instructions

Preheat & Prepare:

Preheat your oven to 350°F (175°C).

Grease and line a 9x5-inch loaf pan with parchment paper.

Make the Vanilla Batter:

In a bowl, whisk together flour, baking powder, baking soda, and salt.

In another bowl, whisk together milk, yogurt, sugar, oil, and vanilla extract until well combined.

Gradually add the dry ingredients to the wet, mixing until just combined. Do not overmix.

Make the Chocolate Batter:

Transfer ⅓ of the vanilla batter to a separate bowl.

Mix in cocoa powder, extra milk, and sugar (if using).

Create the Marble Effect:

Spoon dollops of vanilla and chocolate batter alternately into the loaf pan.

Use a knife or skewer to swirl the batters together gently.

Bake:

Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serve & Enjoy!

Slice and serve with tea, coffee, or milk.

Garlic Pull Apart Bread.

A recipe that never fails.

Ingredients:

3 cups all-purpose flour

2 ¼ tsp (1 packet) instant yeast

2 tbsp sugar

1 tsp salt

¾ cup warm milk (110°F or 45°C)

2 tbsp unsalted butter (melted)

1 egg

½ cup unsalted butter (softened)

4-5 garlic cloves (minced)

2 tbsp fresh parsley (chopped)

½ cup grated Parmesan or mozzarella cheese (optional)

Steps:

Prepare the Dough:

In a large bowl, mix flour, yeast, sugar, and salt.

Add warm milk, melted butter, and egg. Stir to combine.

Knead for 8-10 minutes until smooth. Cover and let rise for 1 hour.

Prepare Garlic Butter:

Mix softened butter, garlic, parsley, and cheese (if using).

Shape Dough:

Roll out the dough into a large rectangle.

Spread garlic butter evenly over the surface.

Cut dough into strips, then into squares.

Assemble Bread:

Layer the squares upright into a greased loaf pan.

Cover and let rise for 30 minutes.

Bake:

Preheat oven to 375°F (190°C).

Bake for 25-30 minutes until golden brown.

Serve:

Let cool for 5-10 minutes. Serve warm.

For the Dough:

3 ½ cups (440g) all-purpose flour

¼ cup (50g) granulated sugar

1 tsp salt

1 tbsp instant yeast

1 cup (240ml) warm milk (110°F/45°C)

¼ cup (60g) unsalted butter, melted

1 large egg

For the Topping:

1 egg, beaten (for egg wash)

Powdered sugar (optional)

Instructions

Step 1: Prepare the Dough

1. In a large mixing bowl, combine flour, sugar, salt, and yeast.

2. Add the warm milk, melted butter, and egg. Mix until the dough comes together.

3. Knead the dough for 8-10 minutes until smooth and elastic. (You can use a stand mixer with a dough hook.)

4. Place the dough in a lightly greased bowl, cover, and let it rise for about 1 hour, or until doubled in size.

Step 2: Divide and Roll

1. After the dough has risen, punch it down and divide it into 4 equal pieces.

2. Roll each piece into a circle about 10-12 inches in diameter.

Step 3: Assemble the Starbread

1. Place the first circle of dough on a parchment-lined baking sheet. Spread a thin layer of your chosen filling (e.g., butter and cinnamon sugar).

2. Repeat with the second and third layers, adding filling between each, and top with the fourth circle of dough (no filling on top).

3. Place a small glass or round cutter in the center of the stacked dough to mark the middle.

Step 4: Shape the Star

1. Use a sharp knife to cut the dough into 16 equal strips, starting from the outer edge of the glass to the edge of the dough.

2. Take two adjacent strips and twist them outward twice, then pinch the ends together to form a point. Repeat for all strips.

Step 5: Final Rise and Bake

1. Cover the shaped bread and let it rise for 20 minutes. Preheat your oven to 350°F (175°C).

2. Brush the starbread with beaten egg for a golden finish.

3. Bake for 20-25 mins. until golden brown.
