We first eat with our eyes". This is an interesting aspect of mindful eating.
Having a rainbow plate helps:
1. Getting different phytochemicals
2. Build strength and immunity
3. Rich in antioxidants and nutrients

Creating a colorful plate/ bowl is easy. Here is a recipe for quinoa bowl with crunchy veggies.

- 1 cup cooked quinoa
- 1/4 cup mixed bell peppers sliced
- 1/4 cup red cabbage sliced
-1/4 cup broccoli
- 1/4 cup white onion sliced
- Some coconut fresh or dried about 1 tbsp
-1 tbsp oil
- salt and pepper to taste
- lemon juice according to taste

How to make:

1. In a pan heat oil. I used olive oil.
2. Add the veggies and saute them for 2-3 minutes on medium to high flame.
3. Mix in quinoa.
4. Add salt, pepper and coconut.
5.Mix well and remove from flame.
6. Stir in lemon juice.
7. Serve warm

It stays good for 2-3 days in fridge. So if you want you can batch cook it for the week.
